Key Responsibilities Assist with the preparation and cutting of various meat products in accordance with company standards and passenger demand while working closely with the Chief Butcher and CDP Butcher to ensure production is carried out smoothly, efficiently, and with the utmost attention to quality, portion control, and waste reduction. Carry out production tasks within your designated station or area in full adherence to the company’s portion control guidelines, recipes, defrosting schedules, trimming methods, and passenger demand, as directed by the Chief Butcher or CDP Butcher. Ensure that all work is performed to the highest standards, including preparation, cutting, and portioning of meats, while maintaining the quality and presentation standards set by the company. Follow and strictly adhere to the daily production schedule, ensuring that all tasks are completed within the set timeframes and as per the specified requirements for the day’s service.Work under the guidance of the Chief Butcher or their representative to meet the production needs for various outlets based on the itinerary, restaurant menus, and passenger requirements. Become thoroughly familiar with the consumption of the major proteins (beef, poultry, pork, fish, etc.) required for daily production across various outlets. Monitor daily production trends and promptly inform the Chief Butcher or CDP Butcher of any discrepancies, anomalies, or unusual trends in meat usage, helping to ensure accurate inventory management and waste reduction. Handle all materials, goods, and meat products with the utmost care, paying attention to proper storage, handling, and use to maintain their quality.Demonstrate a proactive approach to eliminating waste during production by carefully following portion control guidelines and working to reduce any unused product through efficient preparation techniques. Ensure that all products meet the high-quality standards expected by the company. Work in alignment with company-provided recipes, defrosting schedules, and portion control techniques to maintain consistency and high standards in all produced items. Ensure all food safety regulations, including cleanliness, hygiene, and handling protocols, are strictly followed to ensure the safe preparation of meats. Always adhere to food safety and sanitation standards, maintaining a clean and organized workspace. Perform all assigned tasks in a cost-efficient manner, contributing to the overall productivity of the kitchen while maintaining the highest quality standards. Assist in tracking meat usage and production to minimize excess inventory, reducing costs associated with spoilage or waste.

Skills, Knowledge & Expertise Minimim 2 years experience as a butcher or in a similar culinary role, with a strong background in meat preparation and cutting techniques. Deep knowledge of portion control, meat cuts, and food safety practices. Ability to manage daily production and meet passenger demand in a fast-paced, high-volume kitchen environment. Excellent attention to detail with the ability to follow recipes and company standards precisely. Strong communication skills, with the ability to work collaboratively with a team. Demonstrated commitment to minimizing waste and adhering to cost-efficiency practices. Ability to handle high-pressure situations while maintaining quality and consistency. Flexible and willing to assist with other tasks as directed by the Chief Butcher or CDP Butcher.  Proficient in English, with clear and effective communication abilities.
