POSITION SUMMARY:
This position assists in the management of the concession's operations in the facility and training concession employees on the best practices in the distribution, preparation and service of food and refreshments.
POSITION RESPONSIBILITIES:
Supervises the concessions supervisors and employees in the preparation and service of food, refreshments and alcohol, as well as clean-up
Ensures excellent customer service, line management, and product levels for each stand.
Assists in the training of employees working in the warehouse, concessions and beverage sales
Assists with hiring under the direction of the Concession Manager as required
Ensures concessions employees are efficiently preparing and cooking food of the highest quality
Assists with inventory counts and controls
Notifies Concessions Manager of inventory requirements or supplies to be ordered.
Oversees part time warehouse employees and bartenders as required.
Directs storage, preparation and serving of various beverages and food products.
Assigns concessions and beverage workers to locations as required
Tabulates receipts and balances accounts
Inventories supplies on hand at the end of each day or when directed.
Works within guidelines for food and labor costs
SUPERVISORY RESPONSIBILITIES:
Directly supervises all employees in concessions, beverage sales, and warehouse operation – approximately 80 employees. Carries out supervisory responsibilities in accordance with ASM Global’s policies and applicable laws. Responsibilities include assisting the Concession Manager with hiring and training employees; assigning and directing work, recommends rewards and discipline of employees to the Concession Manager and/or Director of F&B; addresses patron and employee complaints and resolves problems.

EDUCATION AND /OR EXPERIENCE
Minimum of an Associate’s Degree from two-year college or university preferred
3 years of related experience and /or training or equivalent combination of education and experience
Previous management experience in a similar venue
Basic working knowledge of cash handling procedures
Proficiency in MS Word and Excel
Knowledge of Appetize software is preferred
Must be ServSafe Certified (alcohol service training)
SKILLS AND ABILITIES
Demonstrated ability to control inventory
Strong written, verbal and interpersonal skills
Ability to function in a fast-paced, team-oriented environment
Ability to train workers in preparation and cooking of foods to ensure high quality, efficient and profitable food service; in beverage services; and in warehouse requirements.
Ability to manage several direct reports (Concession Supervisors)
