Job Description

Summary of Position: The Assistant Kitchen Manager (AKM) is the second in command of the Crooked Hammock kitchen. They are accountable for upholding our standards in every plate, for every guest! This person is responsible for making sure the kitchen runs as a well-oiled machine by managing the kitchen staff to ensure food is made quickly, deliciously, and most importantly - the Crooked Hammock way. The AKM is also responsible for enforcing food safety & sanitation standards. As a leader in our kitchen, it is pivotal for the person in this role to create positive energy and build staff morale.

Duties & Responsibilities:  

Build the Crooked Hammock kitchen team & be an effective coach; elevate staff for growth and assist them in reaching goals by establishing performance expectations, providing feedback, & conducting reviews as necessary Assist with training of new employees and kitchen personnel in safe operation of all kitchen equipment & utensils, cleanliness, and sanitation practices; ensure all team members have the right tools, knowledge & equipment to do their jobs safely & effectively Delegate responsibilities & provide direction to employees regarding operational/procedural issues Be knowledgeable of restaurant policies regarding personnel and assist in administering prompt, fair and consistent corrective action for any violations of company policies, rules & procedures Assist with interviewing, hiring, onboarding, coaching & evaluating for growth, and uphold La Vida’s values of “How We Roll”  Live the brand and be a brand ambassador, enliven the Crooked Hammock Philosophy, and make decisions in the best interest of CHB every time Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards Ensure staff arrives on time and prepared to work; ensure efficient operations by filling in where needed and appropriately cutting labor to accomplish labor management goals Oversee daily prep to ensure restaurant has appropriate amount of product for the day and product meets our quality standards; ensure prep lists are completed accurately and communicated clearly Perform daily line checks prior to service and detailed station checkouts prior to staff departure Assist with weekly inventory as needed and communicate 86’d items to management Prepare all required paperwork including forms, reports & schedules in an organized and timely manner Ensure that all products are ordered according to predetermined product specifications & received in proper condition/unit/count/quality and deliveries are performed in accordance with the restaurant’s receiving policies & procedures Control food cost and usage by following proper procedures, standard recipes and waste control procedures Check and maintain proper food holding and refrigeration temperature control points Assist with training of new employees and kitchen personnel in safe operation of all kitchen equipment & utensils, cleanliness, and sanitation practices; ensure all team members have the right tools, knowledge & equipment to do their jobs safely & effectively Manage daily & weekly deep cleaning and facility maintenance duties; maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas

Qualifications:    

At least 1 year of leadership experience in a high-volume kitchen Must possess a valid driver’s license and be eligible to work in the United States Must be ServSafe certified  Must have a flexible schedule and the ability to balance personal & professional life Strong interpersonal communication skills Must be punctual and reliable Frequently walk and occasionally bend over, twist, kneel, climb, stoop and crouch.
