 The Banquet Cook will be responsible for preparing the kitchen with a multitude of tasks to include the day-to-day preparation of meals and continually uphold the standards in accordance to the Luminary Hotel & Co. service standards and Mainsail Lodging & Development standards.

Reports to: Kitchen Supervisor, Banquet Chef

Status: Non-Exempt

Job Summary:

The Banquet Cook will be responsible for preparing the kitchen with a multitude of tasks to include the day-to-day preparation of meals and continually uphold the standards in accordance to the Luminary Hotel & Co. service standards and Mainsail Lodging & Development standards.

Essential Functions

Assist the Kitchen Supervisors and Banquet Chef with any recipes for each dayAssist with all preparation for banquet/catered eventsUnderstand the recipes for banquet/catered events and able to prepare dishes to standard on a consistent basisMaintain a clean environment - general cleaning to include equipment, floors, walls, coolers, and freezersDishwashing - all kitchen team members wash dishesReturn pots and pans to the dish area for cleaningMaintain a professional, presentable uniform and personal groomingAble to effectively communicate with the team on a daily basisFollow Safe-Staff sanitary compliance throughout every area working in the kitchenBasic vegetable prep to include peeling, slicing, dicing, and portioningBasic sauce prep to include stocks, salad dressings, and vinaigrettesPlating banquet dishes - presenting food for guest to the chef’s specificationsAbility to understand kitchen ordersAbility to work efficientlyAbility to perform all functions in the kitchenAbility to work under pressureAbility to work long hours standing over hot flat tops, stoves, and fryersAbility to work as a team in a stressful, fast-paced environmentKnowledge of different cooking recipes and all kitchen equipmentAble to make great quality comfort foodFollow all safety procedures to include knife safetyRestock clean dishes, flatware, and all cooking equipment to the appropriate storage areasMaintain the banquet kitchen work area in an orderly and clean conditionFollow proper handwashing proceduresStock supplies for the kitchen in specified locationsSort and remove trash and clean the garbage cans/whales dailyMaintain trash area and place in the proper area for pickupAssist with loading and unloading of food deliveries and suppliesPerform other duties as management requests to service our guests

Qualification Standards

Education & Experience

High School diploma or equivalent or higherMinimum of 1-year experience in a food & beverage operation, preferably banquet operationsExcellent customer service skillsExcellent communication skills, both verbal and written

NOTICE:  The hotel business functions seven days a week, 24 hours a day.  All employees must realize this fact and be aware that at all times it may be necessary to move associates from their accustomed shift as business demands.  In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.
