DESCRIPTION
Reporting to the Production Supervisor, the Cheesemaker is responsible for the physical Cheese and general Culture products making processes from beginning to end including their approval for packaging, This includes controls of input material, controls related to mixing of cultured products to approved finished product specifications and all aspects of sanitation for equipment, tools, accessories and the environment used in the process, with accurate measurements and documentations of steps and events throughout their process. This is a 6-month temporary posting to support additional volume.JOB DUTIES
Inoculation, step processes for heating, cutting, drain, wash and cooling of cottage cheese, organize disposition of whey/vat and ‘breaking’ of other cultured products, all required documentations, deviations, corrective actions.Accurate utilizations and accountability for Inventories, following prescribed care and control of DSV (Dry Vat Set Cultures), all tracking and documentations for all material consumptions, including loss.Process samplings, analyzing and reacting to results to consistently achieve target specifications.Intense inspection, maintenance and sanitation of equipment, tools and the environment used in culture products making process, including handling of equipment and piping components 20 – 25 kgs.Mixing of dressings or seasonings, physical and/or pneumatic product piping interconnections and confirmations, accurate and punctual disposition of cultured products from vats to finished product filling roomsPhysical and/or pneumatic product and sanitation piping interconnections and confirmation for central (C.I.P.) or manual sanitation (C.O.P) including analysis and standardization of chemical solutions for sanitation processes for all tools, equipment and environment involved in culture making processes including but not limited to process piping, fermenting tanks (CPT), dressing tanks, knives (harps), and the work area environment.Vigilant in practicing and guarding activities within Cultured Products Process Area to prevent biological, chemical or physical contamination of product.Embrace and foster Environmental and Sustainability initiativeEmbrace and foster attention to JSA (Job Safety Analysis), Risks, their mitigating procedures, Personal Protective Equipment and all other Personal Safety initiatives Must be prepared to function in a varied shift scheduleComply with GMP, HACCP & BRC standards.Other duties as assignedREQUIRED QUALIFICATIONS AND SKILLS
