The Chef de Cuisine leads, manages, and inspires the Evelyn's Restaurant kitchen team to consistently produce high-quality food dishes and oversees daily kitchen operations, ensuring smooth service and adherence to food safety and sanitation standards.
What you will do
• Directly manage an average of 6 – 10 kitchen employees per shift, monitoring performance. Direct and establish daily operational procedures for employees in their daily responsibilities.
• Develop and refine menu offerings, incorporating seasonal ingredients and innovative concepts.
• Lead daily pre-shift meetings, weekly management meetings and monthly staff meetings.
• Manage inventory, ordering, and controlling food costs to meet budgetary goals.
• Inspect and maintain the cleanliness, sanitation, organization, and working condition of the service areas and workstations.
• Train and mentor kitchen staff, fostering a collaborative and efficient team environment.
What you bring
• At least 3-5 years of professional cooking experience, preferably in a luxury hotel or resort. Advanced culinary knowledge.
• Ability to operate, maintain, and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
• Specialized skill with strong leadership qualities.
• Excellent personal presentation and interpersonal skills.
• Solid knife skills.
• Strong time management skills: ability to multi-task, set priorities, and adjust to changing conditions. Willing to work in a fast-paced environment.
• Excellent communication and interpersonal skills; ability to work closely with other departments and communicate clearly and effectively with colleagues and guests.
• Ability to lift, carry, and move up to 70 lbs.
