Job Introduction

Heritage Portfolio are looking for a talented and enthusiastic chef to join our culinary team at the V&A Dundee. Under the guidance of our Head Chef, this role requires the candidate to assist with the production of all food for daily service as well as supporting menu preparation and delivery of our in-house events. All our food is prepared on site and made from scratch, focusing on seasonal and locally sourced produce. The menu changes daily, so there is plenty of room for creativity and personal flair.

After a refurbishment in March 2023, Tatha Bar & Kitchen at V&A Dundee changed from restaurant to café style counter service, offering a range of gourmet deli filled sandwiches and baguettes, seasonal salads, soups and hot dishes as well as a range of daily specials and toasties coming from the kitchen. Set in the most beautiful of surroundings, V&A Dundee is a cultural destination that attracts visitors from all around the UK. We are much loved by our regulars for our location and for our creative, daily changing menu.

This is a contracted role which guarantees the suitable candidate a minimum of 37.5 hours per week throughout the year, with all additional hours worked paid at the same rate of £13.25 - £13.50 per hour depending on experience. Hours of work will predominately be 0800 – 1600, with some requirement to support events business in evenings as required.

Role Responsibility

· Ensuring we deliver a high-quality food service at all times

· To support production and delivery of new product concepts for Retail and Events to an agreed quality and time scale in relation to business requirements

· Support all relevant planning, operational and kitchen service delivery functions for the V&A

· Regularly communicate with the Head Chef to understand the business priorities

· To play an active part within the wider Retail team, including contributing to team activities and discussions

· To visit and work at other sites as required

· Ensure that all Health & Safety legislation is carried out correctly when working at a retail site. This includes all HACCP and COSHH responsibilities and ensuring safe working practices at all times

· Maintain a focus on food allergens and customer information

· Ensure all key operational paperwork and processes are followed and completed in line with compliance

· Report immediately any incidents or accidents, fire, theft, loss, damage, unsuitable food offers and take such action as may be appropriate

The Ideal Candidate

· Experience of all sections of the kitchen in a cafe and restaurant environment

· Experience of producing and delivering dishes and menus based on current allergen legislation

· Have previously worked in a leading modern food venue

· Chef support for all aspects of back of house management

Knowledge, Skills and Attributes:

· Natural creative and innovative flair with a genuine love of food and an eye for detail

· Broad ingredient knowledge, as well as knowledge of local food trends and history

· Awareness of site capabilities

· Must have outstanding communication and presentation skills, including the ability to listen

· Knowledge of Excel, Word and Microsoft Outlook

· Ability to multi-task

· Professional, motivated, driven, flexible and enthusiastic

· Works consistently to high standards

· Ability to work on own initiative and under pressure

· Ability to innovate solutions and prioritise workload

· Strives to continuously learn and develop self
