JOB SUMMARY: To control the safe and efficient use of manufacturing implements.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

The essential duties and responsibilities of this position include, but are not limited to, the following:

Operational

Assists Tortilleria Manager in executing daily production scheduling of entire facility. Executes the lock-out / tag out program in his/her area of responsibility. Maintain a neat, well-groomed personal appearance at all times and observe company dress regulations; must wear an approved hat or hair net. Cook “Nixtamal”; operate the mill (dough); package, count and even up “tortillas”. Work with different types of machinery, including stone grinders. Learn all the products’ names and prices used in the Tortillería department. Maintain general housekeeping and sanitation standards in compliance with store policy, department standards and state and local health regulations on a regular, ongoing basis. Handle damaged and spoiled products according to company policy and assist in controlling the level of damaged goods. Prepare the machine for operation by equipping it with the appropriate tools; run and monitor the machine while it is working; set up and operate machines according to blueprints and specifications; select, position, Tortilla cutters and fixtures onto machine. Exercise quality control by comparing whatever product the machine produces masa affiliated products. Reports immediately any unsafe equipment or malfunction. Works in conjunction with the Maintenance department to maintain a preventive maintenance program in all related equipment.  Responsible for his/her safety and well-being of plant associates.  Executes the quality assurance program as per company standards.  Responsible for keeping the work area or assembly line in optimum sanitation condition and ensures that all SOP’s, HACCP & SSOP’s are executed as planned.  Follows company standards in the execution of the allergen program and immediately reports any deviation.  Fills all paperwork with accuracy related to temperature checks, traceability, and sequential process.    Conducts all formulation with precision and double checks all weights and measures. Records in recipe every procedural step. Initials every completed step in formula.  Ensures that all equipment is properly calibrated and sanitized before use.  Rigorously executes the GMP’s standard operating procedure.  Prevents and reports immediately any potential cross-contamination situation.  Works closely with sanitation to clean and maintain equipment clean and in optimum sanitary conditions. Consistently apply all Company Policies and Procedures.  Perform any other work-related duties as assigned. Leadership Maintain good communication in the department and throughout the organization. Assist in training associates when assigned. Safety Ensure that all tools and machines are in good working condition. Inspect machines periodically throughout the shift; adjust machine speeds Follow strict safety rules and wear protective equipment such as earplugs, gloves, and goggles. Comply with safety policies and procedures; read all of the safety committee bulletins.

REQUIREMENTS AND CONDITIONS:

Education/Experience High school diploma preferred but not required. Minimum one-year experience in the tortillería department or in machine operations. Certificates/Licenses/Registrations Safety Training Food Safety certificate

Skills Required

Must be able to calculate figures and amounts such as weights, measures, gross margins, markup, percentages, proportions, ratios, volume. Ability to verify vendor invoice charges and counts, and complete required accounting reports including inventory, receiving, and variations in cash or column totals. Basic computer skills are helpful. Ability to hear, speak and understand the spoken word in order to respond promptly to pages for assistance, to accommodate verbal requests from customers for information or assistance, to answer telephones, and to be able to communicate effectively with others. Ability to read, write, analyze, interpret and understand the English language with sufficient proficiency in order to read and understand instructions for operating electronic equipment and tools, company handbooks, policies and procedures, and other written jobrelated documents including postings on company bulletin boards. Ability to compose and write reports, business correspondence, and effective departmental memos including "menus", and customer signs or sales suggestions. If the machine is making even a minor error, it is to be shut down and the error must be corrected; should be mechanically inclined. Ability to work in a fast paced environment; must have a good work ethic and be able to work independently without much supervision or direction. Be able to pass a standard drug test and qualify as being drugfree under the legal and medical guidelines permitted by the Drug Free Workplace Act of 1988.

Physical Demands and Work Conditions

The physical demands and work conditions described below are representative of those that must be met by an employee to successfully perform the essential functions of this job. The employee must occasionally exert or lift up to 50 pounds. Successful performance requires specific vision abilities that include close vision and the ability to adjust focus. The work environment includes occasional exposure to low temperatures in refrigerated and frozen food storage areas and frequent exposure to or near heated ovens and high temperatures. The employee must be available to work holidays, weekends and evenings; overtime work is common. Be able to work with fresh meats, fruits, vegetables, flour, oils, spices and other agents without negative allergic consequences. Work areas are generally noisy but well-lit and air conditioned. The environment may be subject to extreme temperatures with exposure to health, water, noise, and some chemicals. Pay Range: $21.75/hr.  to $28.00/hr.
