Position: Chef Residential
The Chef is responsible for the overall management of the kitchen which includes providing nutritional daily meals in an organized environment and supervision and implementation of sanitary standards, food preparation and delivery systems.
Job Scope:
1. Ensure food is ordered, received, cooked and served.
2. Ensure that inventory is maintained.
3. Maintain that the kitchen is always sanitary, meeting health code regulations.
4. Ensure that client population is trained in proper sanitary procedures.
5. Ensure that client population is trained in various food preparation responsibilities.
6. Prepare menu in accordance with weekly cycle menu.
7. Maintain recipe records/production records.
8. Inspect food deliveries.
9. Ensure that a daily closing procedure is followed.
10. Ensure that a monthly inventory and order is sent to NYS Office of General Services. (USDA).
11. Ensure that all documentation pertaining to the operation of the food services department is kept on file as pertaining to regulations.
12. Ensure that all equipment is cleaned daily and is in operational condition.
13. Make suggestions for new ideas concerning menus.
14. Order and prepare any food items for special events, i.e. banquets, out of house trips, etc.
Qualifications
+ Interacting with staff, clients, students and visitors in a courteous, professional and respectful manner that is consistent with the agency’s mission and values.
+ Producing accurate, neat and thorough work.
+ Prioritizing and planning work time efficiently; effectively managing competing demands and dealing with changes, delays and unexpected events.
+ Understanding and consistently complies with agency policy and procedures (including time and attendance, dress code, etc…).
+ Supporting a positive work atmosphere by behaving and communicating in a manner that allows the employee to get along with clients, students, coworkers and supervisors.
+ Communicating (in writing as well as orally) clearly and concisely
+ Illustrating flexibility and adaptability in role and function when circumstances warrant; (demonstrates openness to assist in needed responsibilities in evolving situations).
+ Maintaining appropriate boundaries, ethics and professionalism; complying with agency, OASAS and other professional code(s) of ethics; seeking supervision when challenges arise.
+ Knowledge of state and federal health requirements as they pertain to food preparation and storage, skills to plan menus in compliance with state and federal standards for adolescents, experience in institutional food service. Safe Food Handling certification required.

Position Status
This is a full-time non-exempt position. Mon-Fri 10a-6p
Work Environment
This job operates in a professional office environment and outside in the field. This role routinely uses standard office equipment such as computers, phones, photocopiers, filing cabinets and fax machines. Must be able to travel among assigned sites and locations as needed.
