The Cook I sets the tone for Sonesta’s mission by always going above and beyond for our guests and coworkers. The role’s primary responsibility is to prepare and produce food orders according to quality standards. The Cook shall maintain a safe work environment and follow established sanitation and safety standards.Job Description
The ideal candidate has a passion for hospitality and providing exceptional guest service.
Produce all food orders in a timely and consistent manner in accordance with established quality standards. Test food to ensure quality and consistency of all meals served.
Operate all kitchen equipment in a safe and responsible manner.
Handle and store food items safely and keep the work area clean and sanitized. Including all opening and closing duties.
Adhere to established safety and sanitation guidelines.
Adhere to uniform and grooming standards.
Perform other duties or projects as requested by management.
Duties and Responsibilities
Prepare meals for respective section(s) (restaurant, outlets, etc.) and assist in all kitchen activities to ensure that guests receive high quality food items in a timely manner. Coordinate the smooth service in relation to the pass and pick-up of food.
Organize the day’s prepping and set-up the line and prepping station.
Advise supervisor of low inventory items or may order necessary food items. Assist in receiving items and taking inventory as needed.
Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed the local Health Board inspection and hotel requirements.
Report all unsafe or malfunctioning equipment to supervisor.
Assist in the training, scheduling and supervision of kitchen staff; ensure that all cook’s duties have been performed during shift.
Promote teamwork and quality service through daily communication and coordination with other departments. Key departmental contacts include Sales and Marketing, Catering, Banquets, Outlets, Maintenance, and Guest Services. May occasionally interact directly with guests.
Ability to perform functions with minimal supervision
Help Cook II and Cook III as needed
May assist with other duties as assigned.
Follow recipes
Completes opening duties
May assist with other duties as assigned.
QUALIFICATIONS AND REQUIREMENTS
Excellent organizational skills and attention to detail.
Prioritization and time management skills.
Must be able to read recipes and follow their instructions.
Employ math skills to appropriately prepare items according to recipes.
Ability to work with little supervision and maintain a high level of performance.
Attentive, friendly, helpful, and courteous to all guests, managers, and fellow employees.
Track record of delivering exceptional guest or client experience.
Ability to communicate, both verbally and written, effectively with guests, vendors, and co-workers.
High school diploma or equivalent, plus one year of experience in food preparation, or equivalent combination of education and food preparation experience.
Certification of culinary training or apprenticeship
Food Handler’s Certification
This job requires ability to perform the following:
Carrying or lifting items weighing up to 50 pounds
Remain stationary for extended periods of time
Standing up and moving about the kitchen
Handling food, objects, products and utensils
Bending, stooping, kneeling
Work Environment
Must be able to work in a fast-paced environment.
The bulk of work takes place indoors.
Must be able to tolerate extreme temperatures - i.e. freezers, loading dock.
Physical Demands
Must be able to exert up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
Remain stationary for extended periods of time

Frequent bending, kneeling, and reaching.
Ability to stand during the entire shift.
Expected Hours of Work
Must be flexible to work variable days of the week to include weekends and holidays.
Must be flexible to work variable shifts (days, nights, overnights).
Ten to twelve-hour shifts are sometimes required.
Education and Experience
Relevant experience in restaurant or hotel food preparation preferred.
High school diploma or general education degree (GED) preferred.
Other:
Communication skills (written and oral) are utilized a significant amount of time when interacting with the other cooks, wait staff or guests.
Reading and writing abilities are utilized often when preparing meals from a recipe, when assisting in the scheduling of the kitchen staff, or when keeping track of inventory.
This person utilizes problem solving and reasoning abilities
Mathematical skills, including basic math, percentages, quantities, and variances are used frequently.
Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or provincial government agency.
May be required to work nights, weekends, and/or holidays
