Perform routine kitchen duties, as well as a variety of station specific tasks that require planning and organization to meet deadlines and quality standards. ESSENTIAL JOB FUNCTIONS Prepare menu items to order on demand for all F&B outlets in the hotel. Prepare miscellaneous food items as assigned. Requisition of necessary supplies. Ensure proper sanitation and maintenance of equipment and area utilized during performance of work. Assist in the opening or the lunch turnover to closing of the kitchen daily and ensure standards are maintained from opening each morning until shift ends or the lunch turnover to closing shift. Included but not limited to banquet event service. Capacity to ensure quality of IPC Culinary Standards are met daily. Ensure that all food is handled and cooked in a wholesome, sanitary manner. Follow plate presentation specifications as directed. Assist in kitchen inventory and ordering. Make recommendations to supervisor regarding menu, recipes procedures, food supply, quality, sanitation, etc. Always maintain and promote a team environment. Provide courteous service to guests and be cordial to all employees and vendors. Communicate effectively both orally and in writing. Maintain a consistent, regular attendance record. Maintain safe working conditions and practices. Practice emergency procedures in compliance with standards; react and assist in emergency situations as needed. Ensure by example that the Inn at Perry Cabin standards, and values are known. Observe standards for the department in image, appearance, and grooming; properly represent the company and the profession to outside organizations and the community. Be knowledgeable of, implement, communicate, and comply with policies of IPC, Human Resources Department. Always be an ambassador of IPC in and outside of the workplace. Ensure security and confidentiality of all guests, employees, and Company information. Additional duties as assigned by management. SUPERVISORY RESPONSIBILITIES None. JOB REQUIRMENTS Education & Experience State Specific Sanitation/Food Safety certificate required. Preferred Experience or training in the Culinary Department of a luxury hotel. Culinary degree and/or certification of culinary training or apprenticeship. Skills Possess a minimum of 18-24 months of continuous work history in the culinary field, preferably with fine dining experience included. Must be able to perform all basic and intermediate cooking skills including preparation of soups, sauces, stocks, frying, broiling, sauté, and grilling. Ability to read, write and understand recipes. Ability to maintain full knowledge of all food and beverage offerings. WORKING CONDITIONS The working conditions described below are representative of those an employee encounters while performing the essential functions of this job. Requires normal range of hearing and vision. Must be able to lift equipment, supplies, etc. of at least 50 pounds. Ability to stand for hours while occasionally reaching, twisting, squatting, bending, and leaning. Work Environment Interior of kitchen—occasional exposure to direct sunlight, high humidity, extremes of heat and cold, noise, and other conditions associated with a culinary environment.
