Recognizes special needs/concerns of populations served and adjusts communication accordingly, i.e., language barrier, diminished hearing, concrete terms, etc. Recognizes and integrates cultural differences in menu planning and food production.
Prepares food for all ages; utilizes recipes appropriately. Ensures food is prepared in accordance with HACCP guidelines.
Produces appropriate amounts of food; ascertains that proper quantities are prepared and leftovers utilized.
Illustrates the importance of temperature, appearance, flavor and texture of food.
Illustrates knowledge of chronological age when preparing diets.
Participates in menu planning for a variety of service areas, including patient, cafeteria, and special events.
Participates in production meetings. Assists with food purchasing.
Demonstrates the ability to skillfully prepare all menu items and meet service time standards.
Handles special requests or complaints with a customer focus. Communicates effectively in a courteous, respectful, manner.
assumes ownership of of work area; maintains a neat, clean, clutter free environment.
Maintains clean production equipment, ensures that all production is in proper working order, takes malfunctioning equipment out of service.
Maintains department sanitation standards, practices HACCP infection control guidelines. Is aware of and keeps food out of danger zone. Ensures sanitation standards are met by self and staff.
Demonstrates safety precautions when using equipment: slicer, steam kettles, steamers, steam tables, braisers, ovens, broliers, knives, grill, can openers, blenders, microwaves, ranges, stove, warmers.
Other duties as needed and assigned by the manager.
