Responsibilities Supervise and observe the effectiveness of the cooks and kitchen personnel under the direction of the Sous ChefEnsure food items are prepared according to Delaware North standards of quality, consistency, and timelinesMaintain food storage, receiving, rotating, and stocking as par levels dictatePrepares food to specifications before and during unit operation, properly measures and portions all food itemsComplies with all portion sizes, quality standards, department rules, policies, and procedures, cooks all food to proper specifications in a timely mannerEnsures proper food temperatures are maintained and food is stored correctlyPackages all products to proper specifications Performs opening, closing, and side work duties as instructed and according to proper guidelinesFollows and upholds all health codes and sanitation regulationsMeet all health department standards for safe food handling and operate equipment safely determined by position and OSHA regulationsPerforms other duties assigned Qualifications Must be at least 18 years oldHigh school education is desired; participation/enrollment in culinary programs preferredMinimum of 6 months- 1 year’s previous experience in a back-of-the-house foodservice position preferred Familiarity and experience with knife handling are preferredAbility to move rapidly and coordinate multiple ordersExhibit working knowledge of schedulingPhysical Requirements Manual dexterity is sufficient to chop, mix, blend, whip, etc. a variety of foods and liquids.Ability to lift and carry large pans from ovens or freezers, weighing up to 50 lbs.Standing and walking for entire length of shift, frequently required to reach up to 6-7 feet, twist at waist, bending and squattingPushing and pulling occasionally, to move equipment, mops and broomsKitchen environment – noise levels may be moderate to highWorks frequently in a hot and damp environmentIn contact with sharp knives, slicers, boiling liquids, hot pans, etc.Hazards include, but are not limited to, cuts from broken glass, metal cans, scalds and burns, slipping and trippingFrequently immerses hands in waterShift Details
