Dietary Supervisor
The Grand Rehabilitation & Nursing
Ensure safe and sanitary operation of kitchen operations at all times
Conduct weekly sanitation audits along with the Food Service Director (FSD)
Delegate additional tasks to dietary aides as needed throughout shift, example: handling of call downs, preparation and delivery of additional items needed on units during meal service
Ensure proper portioning and plating of food during tray line
Conduct test tray audits during meal service for temperature, accuracy and appearance and implement corrective actions as needed as per FSD
Conduct daily meal rounds to each dining room along with FSD
Complete weekly resident satisfaction surveys and update resident preferences in Meal Tracker as needed
Check refrigerators in kitchen and on units for sanitation and expired items
Check all logs within kitchen and on units
Enter/remove residents and update room changes in Meal Tracker as needed
Print daily meal tickets/nourishment labels
*Management experience & culinary background required
