ESSENTIAL JOB FUNCTIONS:
Develops financial and business operating plans and capital expenditure plans that are consistent with the overall strategies of the property and company. Formulates, administers, and enforces departmental policies and performance standards. Adapts plans and stays abreast of industry trends, consumer preferences, and participates in setting marketing strategies and goals designed to attract guests to the property. Recommends, coordinates, and leads the planning and implementation of all food and beverage outlets, menus, and service delivery systems. Monitors and sustains guest service levels consistent with property strategies. Monitors and maintains procedures ensuring that sanitary and wholesome food & beverages are served to our employees and guests. Monitors guest and employee satisfaction levels to ensure that the department’s goal and objectives are met. Develops menus and tests new recipes, menus and specifications Institutes cost control procedures, including forecasting, production planning, menu engineering, and cost of sales and labor controls to achieve planned operating performance. Works closely with Purchasing in matters pertaining to the purchase of food and supplies. Ensures that department managers maintain appropriate staffing levels in the Food& Beverage department. Oversees and ensures the quality of management operations in all Food & Beverage areas of the organization. Reviews and approves, as appropriate, all recommendations and suggestions to hire, transfer, suspend, layoff, recall promote, discharge, evaluating, assign, reward, or discipline all Food & Beverage associates. Held accountable, to the highest degree, for the accuracy and thoroughness of departmental records and reports Acts as a role model; always presents oneself as a credit to Harrah's and encourages others to do the same. Meets the attendance guidelines of the job. Adheres to regulatory, departmental, and company policies.QUALIFICATIONS
Five to ten years management experience in food and beverage and multi-unit operation experience is required, or combination of College degree and equivalent experience. Experience in casino or other tightly regulated environment is preferred. Strong communication, supervisory, teamwork, and organizational skills are required. Must be able to read, write, speak, and understand English. Must have the industry standard accounting, business, and computational skills required for planning and operating a food and beverage operation. Computer and spreadsheet competency preferred. This position makes extensive use of the Microsoft Office environment. Experience with electronic point of sale systems required; MICROS experience preferred. Must present a well-groomed appearance.
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS
Must be able to maneuver to all areas of the facility. Must be able to lift and carry up to 30 pounds. Must be able to bend, reach, kneel, twist, and grip items in the course of work. Must have the manual dexterity and coordination to operate office equipment, computer, fax machine, and photocopier. Must be able to respond to visual and aural cues. Must be able to work at a fast pace and in stressful situations.
