Director of Food & Beverage 

About the role: 

The Director of Food & Beverage, which forms part of the Hotel's leadership team, collectively makes key strategic and operational decisions for the Hotel. The Director provides leadership and management for the Food & Beverage Division and is the Creative Operator for all existing and upcoming concepts, ensuring thorough people development together with long-term growth and profitability of the department, division and Hotel. The primary responsibilities for this position are to ensure our guests and homeowners receive the highest level of food quality and service, manage and develop a team, devise and monitor an annual budget, manage labor control and operating expenses and develop relationships with our third party restaurant operator. 

What you will do: 

Maintain and elevate the concept integrity of each venue through collaboration with all areas of F&B and marketing team. 

Lead all functions of the F&B operations, Service, Kitchen and Stewarding teams 

Collaborate with 3rd party operator for the grand opening and operations of Tavernetta Vail 

Strong visibility in the operation, recognize and maintain relationships with regular guests and homeowners and cultivate relationships with new patrons through effective marketing and thoughtful, relevant activations. 

Coordinates the selection, training, development, and evaluation of employees and managers in the F&B division to ensure that established cultural and core standards are met. 

Oversees management hires and development to ensure the highest standards of leadership. 

Ability to lead the culinary managers and line staff to design effective menus, wine lists, beverage programs, generosity moments and amenity offerings while ensuring excellent product quality and value for the customer. 

Ability to attract and retain local talent in a challenging market & support their development and growth. 

Ability to enhance Four Seasons brand leadership with infusion of local culture into the product and service offerings. Specifically with restaurant collaboration. 

Able to innovate and create best-in-class product offerings in F&B and catering. Create F&B components of Ski Chalet including vision, systems and SOPs. 

Provides strategic and operational expertise to the key stakeholders in the business. 

Outcome-focused on guest experience and creating unique culinary experiences for both the corporate and leisure traveler. 

Controls labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the division and resort.  

Oversees the management of scheduling, payroll, POS, Medallia and other F&B systems to optimize revenue, maximize profit and enhance guest satisfaction.  

Plays an active role in developing strategic business plans that support the delivery of the budget. 

Handle guest service enhancements and glitch resolution in case of guest complaints or negative comments and ensure full closure of this, to the guest's satisfaction. 

Responsible for staff communication, training, coaching, documenting any training, disciplinary records and/or absenteeism and periodically evaluating performance. 

What you bring: 

Experience and proven track records leading Service and Kitchen teams. 

Experience and proven track records creating elegant and entertaining F&B concepts. 

Experience working with 3rd party operator preferred. 

Fine dining Restaurant pre-opening experience preferred. 

Requires the ability to operate computer equipment and knowledge of Open Table and Microsoft applications.  Previous experience with MICROS or other POS systems required.   

Enthusiasm, creativity and open-mindedness with a progressive approach to business development. 

Strong interpersonal and relationship-building skills to work with cross-functional teams.    

Elevated Leadership skills and cross-cultural sensitivity, and customer service orientation. 

Guest centricity and understanding the importance of guest’s preferences. 

Internationally versed and multi-venue experience with an entrepreneurial spirit and skill set to deliver on large scale operations including large banquet operations and private events. 

Strong communicator who is fluent in both Spanish and English preferred. 

Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.

Salary range:  $140k - $160k annually  

Eligible for Performance Base Annual Incentive Plan (25% Target)

Schedule & Hours: 

This is a full-time position.  

A successful candidate will have a flexible schedule, and the ability to work morning, afternoon and evening shifts, weekends, and holidays.
