SUMMARY:
The Director of Food & Beverage is a key leadership role within Jena Choctaw Pine Casino is responsible for overseeing the strategic planning, management, and execution of all food and beverage operations. This role plays a crucial part in delivering exceptional dining and beverage experiences for our casino guests, ensuring a high level of customer satisfaction, profitability, and compliance with relevant regulations.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
Strategic Planning:
Develop and implement a comprehensive food and beverage strategy that aligns with the casino's overall business objectives. Continuously evaluate market trends, customer preferences, and competitor offerings to identify opportunities for growth and innovation.Operational Management:
Direct the daily operations of all food and beverage outlets, including restaurants, bars, and catering services. Oversee inventory management, procurement, and vendor relationships to ensure quality and cost-effective sourcing. Monitor and manage the department's budget, revenue, and expenses to maximize profitability. Establish and maintain operational standards, including hygiene, safety, and compliance with health regulations.Team Leadership:
Recruit, train, and develop a skilled and motivated team of food and beverage professionals. Set performance expectations and provide guidance to ensure high-quality service and guest satisfaction. Foster a positive work environment and encourage collaboration among staff.Menu Development:
Collaborate with chefs and culinary teams to create and update menus that meet guest expectations and reflect the Resort's branding. Ensure a balance of diverse culinary offerings, including high-end dining, casual dining, and special promotions.Customer Service:
Champion excellent customer service and guest experience, setting a high standard for the team to follow. Address and resolve guest concerns or complaints promptly and professionally.Marketing and Promotions:
Collaborate with the marketing department to plan and execute effective promotions, special events, and marketing campaigns to drive food and beverage revenue. Monitor the effectiveness of marketing strategies and make adjustments as necessary.Compliance and Regulations:
Ensure that all food and beverage operations adhere to appropriate regulations, including health codes, alcohol licensing, and safety standards. Stay up-to-date with industry regulations and best practices.Financial Analysis and Reporting:
Prepare regular financial reports, forecasts, and performance metrics for the executive team. Analyze data to identify cost-saving opportunities and revenue growth strategies.MINIMUM QUALIFICATIONS:
Bachelor's degree in Hospitality Management, Business Administration, or a related field. An advanced degree is a plus. Proven experience in a similar role within the food and beverage industry, preferably in a casino or resort environment. Strong leadership, organizational, and communication skills. Excellent financial acumen and budget management abilities. Knowledge of industry trends, culinary concepts, and customer preferences. Familiarity with regulatory requirements related to food and beverage operations. A passion for delivering exceptional customer experiences and a commitment to high standards of service. Proficiency in relevant software and technology for inventory management, reporting, and scheduling. Must be able to successfully pass a pre-employment drug/alcohol screen, background investigation, obtain and maintain gaming license.TRIBAL PREFERENCE POLICY:

PHYSICAL DEMANDS:
While performing the duties of this job, the employee regularly is required to sit; use hands to finger, handle, or feel; reach with hands and arms; and talk or hear. The employee frequently is required to walk. The employee occasionally is required to stand for up to eight hours; and stoop, kneel, crouch, or crawl. The employee must occasionally lift and/or move up to 25 pounds.WORK ENVIRONMENT:
Most of the job is performed in a Casino setting with exposure to second-hand smoke and a moderate noise level. Evening, graveyard, holiday and/or weekend work may be required. Extended hours and irregular shifts may be required. Tight time constraints and multiple demands are common.WORK SCHEDULE AND ACCEPTANCE:

I understand that I am expected to work the schedule that is assigned to me weekly or monthly, accepting any changes that are made by my supervisor(s). I understand that I am expected to be on time for any and all shifts, due to the fact I may need to relieve a co-workers and that there may be scheduled events for our guests.
