Omni Hotels & Resorts is seeking a Director of Restaurants for the beautiful new Barton Creek Resort & Spa!

Responsible for the Food and Beverage Outlets in the resort. This position will provide training, mentoring, and recruting for Food and Beverage Operation according to corporate standards of product and service.
Responsibilities Consistent maintenance and refinement of service standardsMaintenance of adequate china, silver and glass inventories for all outlets through communication with Executive StewardMaintenance of adequate linen inventories for all outlets through communication with Laundry ManagerMaintenance of adequate front of the house uniform inventories for all outlets by proper forecasting and purchasingAssist Outlet Managers and Chefs de Cuisine in refinement of successful daily menu specialsAssure consistent maintenance of corporate F&B policies and Procedures in all “front of the house” operationsAssure Outlets Management development through well planned cross training programsReview all purchase requests of Outlet Managers prior to submitting to the Director of Food and BeverageMaintenance of accurate wine inventories and ongoing wine lists updatesConsistent physical maintenance of all outlets and related areasCorrelation of Outlet P&L’s and financial information monthlyParticipates on EOM F&B inventories in coordination with Executive Chef, Beverage Manager and AccountingParticipates on the budgeting and forecasting processesConducts menu engineering analysis on a quarterly basisConducts food and beverage pricing competitive set analysis twice a yearAssures proper cover count procedures are in place in all F&B OutletsAssures adherence to cashier reconciliation of all over/short, missing check reports, comp checks and other related cashier reporting and accountability proceduresAssures full adherence to forecast productivity ratios by approving all weekly schedules prior to submitting to the Director of F&B Qualifications 5 years of experience in Food and Beverage Management role.Must have the ability to manage deadlines.Understanding of Food and Beverage financials including cost and par controls is preferred.General knowledge of Microsoft Word, Excel, and PowerPoint.Must have a strong attention to detail as well as strong customer service skills.Must be Food Handler and TABC certified.Must be able to work a flexible schedule including weekends and holidays.Must be able to lift/move up to 50lbs
