Director of Wine and Spirits

We are seeking to fill a key position in our Food & Beverage department that oversees all aspects of the beverage operation at the resort, as well as managing our prestigious cellar and grow our program to have some of the rare wines of the world so true wine connoisseurs appreciate the depth & diversity of our cellar. Responsible for training staff on beverage knowledge to better the guest experience.

It is the objective of the Director of Wine and Spirits to oversee beverage services as whole. These duties entail the utilization of the candidates knowledge of wine and spirits to conduct training for alcohol service across the resort, tasting classes for our guests, cost control and beverage list maintenance. The individual in this role places an emphasis on training and associate development as well as implementation of policies and procedures consistent with a professional world-class resort. This individual also serves as a guest contact in handling problems, concerns, and special requests.

ESSENTIAL FUNCTIONS:

Responsible for actively building and training guest relations and acts as a mentor to other associates to provide superior guest service. Responsible for all day-to-day multi-bar/beverage operations throughout the resort. Oversees all beverage lists, inventory of resort bars, beverage training and quality assurance of all bar staff. Places all wine orders as needed for par levels as well as new products which will boost revenue and profits due to new market trends. Verifies receipt of correct products based on orders places with the assistance of the Purchasing department. Develops wine and beverage formatting/layouts for outlets across the resort. Communicates with all vendors and representatives for items needed as well as communication from within the industry on available products and growing trends. Maintains wine-by-the-glass program and ensures appropriate selections for individual outlets. Conducts all public and catering tastings. Covers as a Sommelier if one is unavailable. Conducts and maintains wine and beverage training for all outlets as determined by the outlet's influence of cuisine. Streamlines the efficiency of all bar layouts including well setup back bars. Increases revenues through wine, spirit, beer, and cocktail pairing in individual outlets as it suits the outlets atmosphere. Supports all outlet Restaurant Managers/Assistant Managers to ensure developmental and professional success in partnership with beverage operations. Maintains, coordinates and oversees training of associates to ensure the highest quality of luxury service is maintained. Oversees opening, operating and closing checklists for each specific outlet. In absence of Vice President of Food and Beverage- attends meetings and functions. Responsible for maintaining, overseeing, and developing specialty nights. Meets all financial goals in accordance with budgets; works with Vice President of Food and Beverage on P&L's, forecasting, budgeting, labor/beverage costs as well as accountability and critique. Engages and develops staff to elevate business expectations, improved financial health and overall team progression. Reviews all outlet PO's as well as staffing guides, monthly inventories, etc. Takes an active role in all Food and Beverage Meetings (Resume, Ops, F&B, etc). Responsible for the growth and maintenance of area services to assure best-in-the-world experiences. Assists sales team during tours and site visits by upselling activities and adventures to close group deals. Ensures smooth daily operations of Beverage Operations and the highest safety protocols. Conducts regular safety audits of both product and personnel. Ensures timely submission of payroll; approves all schedules created by management team. Follows up with guest concerns in a timely fashion. Communicates all resort news to associates as needed. Assists in creating yearly operating budget. Has excellent attention to details and ability to multi-task in high-pressure situations while maintaining confidentiality. Demonstrates independent and advanced decision-making skills for complex problems by utilizing critical thinking, analysis and problem-solving. Has outstanding time-management skills - with proven ability to accomplish numerous tasks and challenging priorities in an effective and timely manner; demonstrated ability to execute on short-term, deadline-driven tasks daily, as well as important long-term projects requiring collaboration from multiple parties. Regularly responsible for associate engagement and provides feedback on creating a positive atmosphere for associates. Creates work schedules to ensure adequate staffing during dining periods and actively moves through Food and Beverage department - assisting associates when necessary, interacting with guests, and generally overseeing that fine dining service standards meet/exceed expectations. Ability to communicate effectively and professionally with external contacts and all levels of associates. Ability to use all required office equipment in an effective and efficient manner. Maintains Forbes 5-star standards throughout guest stay. Promotes a high level of associate morale and teamwork within the Beverage Operations team. Other job duties as assigned.

KNOWLEDGE, SKILLS, AND ABILITIES REQUIRED:

Bachelor's degree in Hospitality Management and/or relatable restaurant/beverage leadership experience. 1st Level Sommelier certification or higher. Minimum of 5 years' experience in related Wine and Spirit training or sales field. Minimum of 3 years' experience in Beverage leadership - particularly in a high-end luxury multi-outlet resort. Forbes 4 or 5 star and/or AAA 4 or 5 diamond experience preferred. Must posses an outgoing personality and knowledge of superior guest service training. Must be at least 21 years of age. Must be able to work varying shifts - including evenings, weekends, nights, and holidays. Must be able to speak the English language fluently. Knowledge of and ability to operate Microsoft Office Programs - Word, Excel, PowerPoint, etc. Proven track record of staff development and retention. Must be able to lift/push/pull/carry no more than 5-30 lbs. Ability to stand continuously for 95% of shift, operate equipment for 15%, kneel for 20%, bend for 50%, climb for 35%, and drive for 40% of their scheduled shift. Valid Driver's License required.
