Sodexo is seeking an Executive Chef at The College of New Jersey! The Executive Chef will be responsible for all Food and Beverage in all Retail and Catering locations, must be creative, innovative and strong understanding of operational finances. The employee base is unionized, there is a lot of client/student interaction, candidate must be visible during meal periods, work closely with all culinary and management staff.
The successful candidate will:
be responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecastingensure Sodexo Culinary standards including recipe compliance and food quality are implementedhave the ability and willingness to develop and motivate team members to embrace culinary innovations ensure food safety, sanitation and workplace safety standard compliancehave working knowledge of automated food inventory, ordering, production and management systemsmanage food costing, controls and complianceability to develop menushave high expectations for customer service and quality of food;have the ability and willingness to develop and train front-line employeeshave a passion for food and innovationhave knowledge of special diets and allergensknowledge of Sodexo Food Management System (DRIVE) is preferredKnowledge of Market ConnectionKnowledge of the Purchase Awareness MonitorKnowledge of Sodexo Physical & Food Safety Standards (Eco Sure)Is this opportunity right for you? Qualifications & RequirementsBasic Education Requirement - Bachelor’s Degree or equivalent experience
Basic Management Experience - 3 years
Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
