Purpose

The Executive Chef oversees multiple residential dining halls at The University of Texas at Austin for University Housing and Dining (UHD). The Executive Chef is committed to delivering consistent, high-quality food that adheres to HACCP regulations and reflects a dedication to innovation and continuous improvement. The Executive Chef aims to elevate the dining experience for our students, staff, and guests by continuing to provide 5-star service.

Responsibilities

Direct the operation of all food production areas of a large dining facility including salad prep, bakery, hot food production, service lines, allergen free line (FAST LINE) and catering. Ensure all food is on lines at the designated times, with proper garnishing and line placement. Ensure all production paperwork is complete and turned in after each meal period. Work closely with the basement food production team and commissary/bakery team. Conduct thorough line checks. Stay current with food trends and ensure menus cater to a wide range of dietary needs and preferences. Ensure that high standards for quality customer service and food quality are achieved. Ensure food is presented attractively and consistently. Maintain high standards of food quality, taste, and presentation. Implement quality control procedures to maintain excellence. Assist with special events from the planning stages to the execution of the event.

Manage, coach, and train staff in outstanding food presentation and customer service. Provide leadership in menu and recipe development, ensuring accuracy in recipes. Lead chef managers and executive sous chef to ensure 5-star service in all dining operations. Supervise food production operations in the Jester complex and distribute food to different lines/areas. Assist in maintaining food cost, inventory and purchases. Utilize a computerized food management system to access recipes, control costs, and plan menus. Assist in product costing.

Ensure compliance with food safety and sanitation guidelines. Maintain temperature logs throughout shift and ensure food is cooked to the appropriate temperature. Minimize cross contamination and actively monitor food quality. Conduct regular inspections and audits to maintain cleanliness and safety standards.

Recruit, hire, train, supervise, motivate, and evaluate staff. Utilize efficiently all UHD professional software including but not limited to food management systems, work order systems, and time management software. Establish and maintain positive relations with all UHD dining teams, students, staff, faculty, conference groups, and campus guests.

Adhere to written and oral University and UHD policies such as time and attendance and UHD / UT trainings and compliance. Complete and maintain required food safety training, including Texas Food Handler Safety. Perform other duties as assigned.  

Required Qualifications

Bachelors Degree.

At least 3 years of experience in a supervisory/manager capacity.

Experience with operating standard kitchen equipment.

Ability to complete and maintain University Housing and Dining Food Safety Training and or ServSafe.

Relevant education and experience may be substituted as appropriate.

Preferred Qualifications

Experience working in a higher education culinary and/or dining department.

Experience and comprehensive knowledge of culinary techniques, menu planning, recipe development, dining trends, preparation and presentation.

Experience with budget management and/or food cost analysis.

5 or more years of experience supervising kitchen personnel. 

Knowledge and use of general and commercial kitchen equipment.

Demonstration of a high level of knowledge in regional, international, ethnic and dietary and allergen friendly cuisines and/or processes.

Experience with procurement systems and product evaluations.

Experience developing a cohesive culinary team, overseeing the training and development of culinary staff.

Salary Range

$70,000 + depending on qualifications
