Job Summary We are seeking a creative and strategic Executive Chef to lead the culinary vision for a high-end lounge with a small, curated lite menu and oversee a catering operation that integrates both in-house and external catering services. This role combines culinary expertise with strong leadership and organizational skills to deliver exceptional food quality and seamless event catering. The ideal candidate will thrive in a luxury environment and excel at building relationships with external vendors, managing internal production, and creating memorable dining experiences. Key Responsibilities: Sky Lounge Operations: + Design and oversee a high-end, seasonal lite menu for the lounge, focusing on quality, creativity, and customer appeal. + Ensure the kitchen operates efficiently during lounge hours, maintaining high standards of food presentation, consistency, and quality. + Develop and implement processes for portion control, inventory management, and food safety. + Collaborate with the lounge's bar team to create unique food and beverage pairings. Catering Management: + Coordinate and manage catering operations, including both in-house and external catering services. + Vet, negotiate contracts, and maintain relationships with preferred external caterers to ensure high-quality offerings and service consistency. + Oversee the production of internal catering for smaller events, ensuring it aligns with client expectations and brand standards. + Develop catering menus as needed, tailoring offerings to client preferences and event requirements. + Ensure flawless execution of catered events by collaborating with event coordinators and managing timelines, staffing, and quality control. Leadership & Team Management: + Lead and manage a small kitchen team, providing training, mentoring, and performance evaluations to ensure a cohesive and high-performing operation. + Oversee hiring, scheduling, and training of kitchen staff to meet the demands of lounge operations and internal catering. + Foster a positive work environment that emphasizes teamwork, creativity, and high standards of service. Financial Oversight: + Develop and manage budgets for the lounge menu and catering operations, focusing on cost control, revenue goals, and profitability. + Monitor food costs, labor expenses, and supplier contracts to optimize financial performance. + Analyze sales and customer feedback to refine menus and pricing strategies. Compliance and Safety: + Ensure compliance with all health and safety regulations, including proper food handling, sanitation, and storage procedures. + Conduct regular inspections of kitchen facilities and equipment to maintain cleanliness and functionality. + Stay up-to-date on food trends, culinary innovations, and regulatory changes to keep the operation competitive and compliant. Qualifications: + Minimum of 5 years of experience as an Executive Chef or similar leadership role in a high-end hospitality or catering environment. + Strong culinary skills with a passion for creating innovative, seasonal, and visually stunning menus. + Proven experience managing catering operations, including working with external vendors. + Exceptional organizational and multitasking abilities to manage both lounge and catering demands. + Strong leadership skills, with experience training and mentoring staff. + Financial acumen, including experience managing budgets, food costs, and vendor contracts. + Culinary degree or equivalent professional training preferred.
