Executive Chef - Martell Signature

Join Martell as Executive Chef for our teams in Cognac! In a friendly work environment, close to our vineyards and production sites, you will execute the gastronomic menu created by the chef for Signature Martell for private guests, coordinate the gastronomic operational management on Chanteloup and embody the Martell’s style.

Your key missions:

You will execute & design the gastronomic signature for Martell Signature:

Execute the menu created by Alexandre Mazzia for Signature Martell par Alexandre Mazzia*

Design & execute the specific menu for markets taking into account the specificities of each market

Create all technical files + food costs

Translate the brand purpose and spirit style into a gastronomic signature

Integrate a strong footprint based on nature and seasonality

Select carefully local products to support local suppliers and limit carbon footprint

You will coordinate kitchen management:

Manage suppliers, equipments, stock, orders and deliveries

Ensure that a sustainable approach is well integrated in the whole process

Adjust the different offers (menus) according to the audiences (Signature Martell / Market menu)

Ensure that food costs are fully respected & create technical files for every menu created

Guarantee that all food safety & traceability measures are respected and applied by the team

Supervise maintenance of equipments

Manage the Easybuy process for the activity

You will manage the team and ensure the respect of law regulations :

Organize & structure the team

Ensure fluid planning management

Guarantee a high level of engagement, motivation and implication

Ensure that all law regulations are fully respected

Recruit and develop new team members

You have 10+ years of proven experience in prestige restaurants in an international environment ideally.

You are at ease with: Creative cuisine, suppliers management, ability to work transversally, international cuisine knowledge, budget management. Leadership skills and relationship abilities. Good communication skills, open minded, agility & adaptabilitu, creativity, dynamic & energic. Sensibility for luxury environment

You are fluent in English.
