Compensation: $18.00 - $22.00

Position Summary:

The Cook serves under Kitchen Management; Executive Chef, Sous Chef and or Kitchen Manager and works closely with the Kitchen and Restaurant teams.  The Cook prepares menu food items for all Casino restaurants, including Grab and Go, employee dining room and special functions and meetings. The Cook’s duties also include buffet runner, carver etc. in the restaurant and for special events or banquets.

NOTE: Native American preference will be given

Essential Duties & Responsibilities:

Prepares, seasons, finishes, and garnishes all food outlined by the Executive Chef.

Maintains all refrigeration and dry storage areas to ensure proper handling and rotation of products.

Ensures their culinary workstation is clean and that all food items are properly covered, labeled and stored at the end of shift.

Follows all recipes, specifications, and control procedures.

Maintains a clean and sanitary area at all times in full accordance with health regulations.

Assists with guest requests when needed.

At times, washes and stocks dishes in the absence of the dishwasher or in high demand. Assists with storage and proper rotation of food products.

Uses dry and liquid measure and scales.

Maintains a culinary workstation when required.

Performs proper receiving, thawing, and storage in correct location, proportioning prep area sanitation, heating and holding, and re-reheating (including sauces, soups, salad bar items, lunch, dinner, and produce).

At times, washes dishes in the absence of the dishwasher or in high demand.

Experience and Education:

High school diploma or equivalent, preferred. At least two years related experience and/or a combination of experience and Culinary degree. Must have minimal knowledge and skill levels in culinary arts and sanitation.  

Minimum Qualifications:

At least two years related experience and/or a combination of experience and formal education in the culinary arts field. Must hold and maintain a food handler’s certification form a state recognized institution or Indian health services. Not required but encouraged to have and maintain a New Mexico state liqueur license. Must pass a drug screening and a background screening. This positon is a key positon within the team your teamwork, positive attitude, communication, reliability and dependability are expected at all times.

Physical Requirements:

While performing the duties of this job, the employee is required to stand and walk for extended periods. The employee occasionally is required to sit, stoop, kneel, crouch, or crawl.  The employee will be required to talk for extended periods and must be able to hear and understand. The employee must occasionally lift or move up to fifty (50) pounds.  The work environment includes a variety of setting the following: food, oils, and cooking surfaces. The incumbent occasionally exposed to loud noise, change in temperatures, and second-hand smoke.

Work Environment:

In the kitchen environment, you may be exposed to varying arias with different levels of temperature from heat to cold. Work is generally performed in a casino setting with exposure to second-hand smoke and a high noise level. Due to the nature and scope of this position, evenings, weekends, holidays, and extended hours and irregular shifts will be required.
