**Job Summary and Qualifications**
Prepare food (toast, bagels, cold cereals, condiments) and serve food as per HACCP, Idaho Food Code and FNS ICARE standards for safe, accurate, high quality food with minimal waste and within designated service time frames. Set up tray line station; assist with meal tray assembly. Stock up and clean up tray line station and dish room area. Deliver meal carts to nursing units. Retrieve meal carts and late meal trays. Set up, clean up and take down dish machine and dish room. Wash and sanitize dishes, utensils, pots, and pans; store clean dishes in designated locations. Wash and sanitize meal carts. Remove trash from the department.
+ Set up and stock tray line station, assemble serving utensils for correct portion control; seek management input for food quality or food display issues
+ Assemble trays as per written menu selections, non-select guidelines or menu cycle and portion control guidelines to provide food as ordered (food allergies, diet/therapeutic diet, modified texture diet items, patient requests, correct portions). Use meal tray set up diagram.
+ Evaluate food quality by tasting, smelling, visual inspection, and exercising personal judgment to determine that food meets the established quality standards. Insure food safety by taking the holding temperature of foods for tray line, also document late trays on log.
+ Pull/prep and stock items needed for the following day as assigned. Use stock up list to stock areas (food, supplies, dishes).
+ Clean up tray line station after meal service. Follow stock up list to stock tray line station (food, supplies, dishes) after meal service
+ “Clean as you go” and maintain a clean, neat and orderly work area including counters and floors with walk in/reach in coolers and freezers kept organized and clean. Clean up dish room area. Use job specific cleaning list to complete cleaning duties as assigned.
+ Deliver patient meal tray carts to nursing units; Retrieve patient meal tray carts from nursing units as per established time frames to allow patients enough time to eat; Check dirty meal tray carts and return trays to department for washing.
+ Set up dish machine and dish room with soaking solutions, racks, etc; Break down and clean dish machine as specified; Trash removal throughout the department including the cafeteria.
+ Check dish machine temperatures are hot enough for washing and sanitizing with documentation on the Dish Machine Temp QC Log. Double check dish machine temp with a T stick weekly. Takes corrective action if dish machine temps do not meet standards; inform supervisor if adequate dish machine temperatures not attained so emergency dish washing process may be used.
+ Disassemble meal trays; pre-scrape and flush, sort and soak dishes, silverware and utensils.
+ Contact supervisor when isolation trays, body fluids or medication is found on meal tray or isolation tray returned to the department.
+ Pre-scrape, flush and wash pots and pans in the 3-part sink and take to dish machine to be washed and sanitized.
+ Chemically clean and sanitize meal carts; deep clean meal carts and late tray carts as per schedule.
+ Keep cafeteria meal tray window clear and cafeteria garbage emptied.
+ Handle clean dishes, silverware and utensils by non-food contact edges/surfaces, dishes are air dried with no wet stacking, uses cart to transport for efficiency and prevent cross contamination
**What qualifications you will need:**
