This position requires lifting, pulling and squatting. Prepares, measures and mixes ingredients in proper amounts following standardized recipes for assigned bakery items, including modified diets. Prepares items and amounts on production sheets unless changed by the Food Service Administrator or Designates. Portion size of finished products or score items such as sheet cakes. Portions or counts items to prevent waste. Assures proper serving size, garnish and tray appeal. Operates mixing, kneading equipment, steam jacket kettles, and other equipment as necessary, observing all safety practices. Sets proper oven temperatures and operates ovens. Responsible for daily cleaning and special cleaning and sanitation for all equipment and bake shop. Prepares cornbread dressing, pancake mix, and biscuit toppings for food support workers as needed. Works on resident tray line and Employee Cafeteria during the serving of meals, Adheres to standards of portion control while serving. While on duty, follows and carries out Florida State Hospital and department safety practices and policies.
