As the Ikura Manager, you will be a vital member at one of our Alaskan processing facilities responsible for the overall production and quality of Ikura (salmon roe) within their assigned processing facility. The Ikura Manager will oversee all aspects of ikura production, including sorting, cleaning, salting, curing, and packaging, ensuring adherence to strict quality control and food safety standards. You will also be responsible for managing production schedules, optimizing yields, and minimizing waste, while maintaining accurate records and ensuring compliance with all relevant regulations. Lastly, you will be accountable for inventory management, ensuring proper storage and traceability of both raw materials and finished products. This position requires a strong understanding of product specifications, market demands, and the ability to troubleshoot processing issues to consistently deliver high-quality Ikura.
Essential Functions/Qualifications
The responsibilities of the position include the following:
Oversee all stages of ikura (salmon roe) production, from raw material receiving to final product packaging. Works closely with Production Manager and Ikura Lead to ensure all equipment is set and running properly on a daily basis Ensure adherence to quality standards and production schedules. Optimize production processes to maximize yield and minimize waste. Inspect and evaluate incoming raw salmon roe for quality and freshness. Manage inventory of raw materials and ensure proper storage and handling. Implement and enforce strict quality control procedures at all stages of production. Conduct regular inspections and testing of ikura to ensure compliance with quality standards. Maintain a clean and sanitary work environment in accordance with food safety regulations. Ensure compliance with HACCP and other relevant food safety programs. Train and supervise staff on proper sanitation and hygiene practices. Supervise and train production staff on ikura processing techniques and quality control procedures. Address and resolve any quality issues or deviations. Maintain accurate production records, including raw material usage, production yields, and quality control data. Generate reports on production performance and identify areas for improvement. Maintain accurate traceability records. Report any equipment malfunctions. Other duties as assigned to ensure the facility and organization is fully supported and successful.Competencies

High school diploma or GED equivalent preferred but not required. 2-3 years’ experience in processing and packing frozen roe for Japanese/European/Domestic markets. Familiarity with Sujiko, bi-lingual in Japanese, Spanish or Russian, as well as HACCP certification is a plus. Relevant workplace experience may be a substitute for the above Position may require driven machinery certifications such as a forklift which in turn requires a valid driver’s license.Work Environment and Schedule
While performing the duties of this job, the employee is regularly exposed to moving mechanical parts. The employee is frequently exposed to wet and/or humid conditions and extreme cold. The employee is occasionally exposed to high, precarious places; fumes or airborne particles; toxic or caustic chemicals; outside weather conditions; risk of electrical shock and vibration. The noise level in the work environment is usually loud. Position requires onsite presence at one of our Alaska processing facilities, and the ability to travel, including at times to remote locations.
Physical Demands
While performing the essential function and job duties associated with the job, the employee is regularly required to sit, handle, or feel and talk or hear. The employee is occasionally required to stand, walk, reach with hands and arms and stoop, kneel, crouch, or crawl. The employee must occasionally lift and/or move up to 50 pounds.
