The Commissary Production Manager will effectively manage the production and operation of the prepared food products to be shipped to the store locations. He/she will plan, organize, lead, coordinate and optimize the materials and associates in the commissary department to provide variety and high quality merchandise. The Commissary Production Manager will report to the Commissary Director.

Minimum Qualifications

1. Must be at least 18 years of age.

2. High school diploma or equivalent.

3. Successful understanding in the kitchen operation (i.e., merchandising, ordering, inventory, and pricing).

4. 3-5 year of professional cooking experience in the food industry.

5. Experience with managing people and the ability to carry out personnel evaluations, set performance targets and deal with difficult situations.

6. Must be detail oriented with the ability to work in a fast paced, multi-task, dead-line driven environment.

7. Ability to display initiative and work with limited supervision.

8. Self-motivated individual with strong organizational skills.

9. Must be ServSafe certified.

10. Computer skills in e-mail retrieving and sending; basic word document skills.

11. Must be able to read and write English adequately.

12. Ability to speak, understand and follow English instructions.

13. Ability to work with people of various backgrounds, personality traits and levels of authority to accomplish department and Company goals.

14. Successful completion of pre-employment/promotion drug screen and criminal background check. (Timeline must fall within Company guidelines.)

Responsibilities

1. Provide an open door atmosphere conducive to high associate morale and excellent customer service. Achieve the highest associate morale in the industry by managing in a style that is Respectful, Supportive and Totally Team Oriented (RSTO).

2. Commit to the “Golden Rule” and work with other associates to build a strong team atmosphere.

3. Ensure the department achieves the standards of performance as outlines in the work and merchandising plan.

4. Possess good communication skills and the ability to conduct and facilitate department meetings.

5. Ensure all department associates receive proper review and training regarding job descriptions, goals and objectives in accordance with company policy and procedures.

6. Ensure fair and consistent treatment in administering discipline to promote high associate morale.

7. Responsible for inventory, security and expense control of the department.

8. Ensure that company standards of safety, proper food handling practices, sanitation and productivity are achieved.

9. Practice the “Cleaner’s Creed” and proper sanitation procedures.

10. Order, receive, unload and store deliveries properly.

11. Coordinate and monitor the production process and adjust production schedules as needed.

12. Keep all kitchen products in coolers and freezers properly rotated in accordance with company policy. Always make use of the oldest products first (first in, first out).

13. Monitor coolers and freezers temperatures to ensure product quality; report refrigeration failure immediately.

14. Effectively maintain proper storage to limit shrink and damaged goods.

15. Ensure all product labels and prices are aligned with product.

16. Plan work schedules and breaks; achieve payroll consistently by scheduling within budget.

17. Ensure all wage and hour policies and regulations are adhered to.

18. Maintain accurate records. Respond timely to all location mail, reports, and records.

19. Minimize all department expenses without compromising department conditions or customer service level (i.e., payroll, supplies, insurance cost).

20. Delegate and use initiative, ingenuity and good judgment to act on opportunities and solve problems.

21. Review production goals and objectives with the Commissary Director.

22. Ensure compliance with company policies and procedures, thus compliance with all state and federal laws applicable to our industry (i.e., labor/scheduling laws, dress code, sanitation regulations, etc.).

23. Guarantee outstanding product quality and presentation according to company standards.

24. Ensure work areas are swept clean, orderly and free from safety hazards; report hazards to management.

25. Exercise proper safety practices when lifting or moving product or using equipment.

26. Able to operate and clean department equipment and tools.

2. Ensure department associates adhere to company dress code standards.

3. Notify management of associate theft, unauthorized mark downs or property defacement.
