Kitchen Mechanic (Facilities)

Under the guidance of the HVAC Supervisor, the Kitchen Mechanic is responsible for repairing, maintaining and conducting preventive maintenance for all kitchen food service equipment. The Kitchen Mechanic is responsible for being proactive in repairs and communicating all repair needs, and for maintaining repair and maintenance records for equipment.

Essential Duties & Responsibilities

1. Responsible for repairing and conducting preventative maintenance programs on kitchen and bar equipment including but not limited to: sinks, faucets, floor drains, dish washers,  stoves, ranges, cheese melters, fryers, induction burners, toasters, smokers, conventional ovens, convection ovens, broilers, hotwells, griddles, dishwashers, broilers, food prep tables, steam tables, etc. Coordinates large installs to repair, adjust, dissemble, replace, and reassemble of commercial kitchen equipment (i.e. replacing motors, belts, bearings, electrical components such as circuit boards, contractors, modules, defrost timers, fuses, capacitors, thermostats, etc.).  Demonstrates effective troubleshooting and problem solving skills with the ability to perform on-site design modifications as appropriate per factory specifications.

2. Maintains kitchen food service equipment inventory and related records of frequently used parts, equipment and supplies and generates requisitions for replenishment.

3. Receives and completes service orders and completes preventative maintenance records on all equipment.  Writes repair service order tickets and out of order tags preparatory to equipment repair.

4. Coordinates with kitchen operations staff on deep cleaning of equipment. Examples- Deep Fryers, Griddles, and Char Grills to detect excessive noise and heat and greases motors and bearings.

5. Collaborates with departments, vendors, general contractors, and sub-contractors when completing projects and tasks.

6. Performs other duties as assigned to support the efficient operation of the department.

Education/Experience/Qualifications High School Diploma or GED required. HVAC Technician Training Accredited Program and EPA Certification required.   Minimum five (5) years Kitchen Mechanic experience required with mechanical and electrical experience required. Familiar with ASHRAE standards or general knowledge of kitchen code requirements. Proficiency in Microsoft (Word, Excel and Outlook). Must be able to work on call for after hour emergencies. Knowledge of and ability to operate hand-held and power equipment and tools. Must possess own tools. Ability to read and understand blue prints, as-builts, and schematics. Knowledge of emergency shut-off procedures for gas, water, electrical, etc.; domestic and water systems including an understanding of fluid motion, pumps, motors, and plumbing. Ability to follow safety guidelines when using required equipment, tools, and techniques while performing job duties. Ability to use manufacturer interface software to navigate and investigate electronic control interfaces. Service order system (HotSOS) experience preferred to promptly perform service orders for any equipment that requires assistance. Knowledge in working with FRP, stainless panels and drywall, and keeps all chemicals in assigned areas with proper labels (SDS). Knowledgeable and proficient with control circuit wiring, solid state circuitry, gas safeties and controls and monitors equipment for safety and efficiency of operations. Food service equipment experience with the ability to work on a wide variety of commercial/industrial grade food service equipment. Equivalent combination of education and progressive, relevant and direct experience may be considered in lieu of minimum educational/experience requirements indicated above. Certificates/Licenses/Registrations At the discretion of the San Manuel Tribal Gaming Commission you may be required to obtain and maintain a gaming license. A qualified candidate/employee must have and maintain valid driver’s license with an acceptable driving record as determined by the enterprise’s insurance carrier.
