JOB SUMMARY: The Lead Bartender at Nobu provides prompt, friendly, excellent service to all guests who come to the restaurant. Leads are designated coaches behind the bar and assist the bar team throughout shift, while maintaining service standards within their designated position behind the bar.

ESSENTIAL JOB FUNCTIONS: 

Handles all aspects of the bar operation during assigned shift.  Support the team in delivering food and drink orders from guests or servers and provides prompt and courteous service while preparing drink orders according to request.  Conducts service at an elevated standard. Ensures bar staff behavior and appearance are in compliance with established policy. Reports to management daily before shift.  Checks in with hostess for daily reservation updates. Ensures that guest’s problems/complaints are handled in an effective, courteous manner.  Directly oversees bar staff on assigned shift to ensure completion of all duties by team. Coordinates with Server Lead for daily bar position assignments on floorplan. Assigns daily opening and closing side work for bar team. Conducts assigned duties according to procedures. Greets guests quickly and courteously.  Assists with training new incoming staff and keeps daily shift log of progress with management. Leads bi-weekly bar team meetings and contributes to Tip Committee meetings with Lead Servers and management. Able to assist in and cover for all FOH positions of the bar team when required.    Handles and solves any concerns and questions from guests.  Keeps all guest areas clean and neat.  Complies with all appearance standards. Assists bar manager with weekly and monthly inventory counts. Alerts management of any items below par on the floor. Responsible for accurate control of cash drawer, and any overages or shortages from the shift. Handles all daily cash transactions and cash tip logs for the floor staff. Assists with organization and distribution of daily staff tips. Logs all tip percentage changes for bar team. Acts as a role model to other employees and always presents oneself as a credit to Caesars and encourages others to do the same.  Meets the attendance guidelines of the job and adheres to regulatory, departmental and company policies. Reports any employees not adhering to company policies to management. Meets with Bar manager for weekly bar updates. Shows creative skill and presentation for cocktail contributions to menu.  Exhibits excellent craft and classic cocktail knowledge behind bar. Able to always perform expected elevated service standards including high-volume nights. Able to open and close in any position on bar team. Able to assist on the floor, in any position. Leads weekly pre-shift bar training for FOH staff. Coaches FOH staff on beer/wine/sake/cocktail knowledge. Ensures all drinks are rung in correctly by bar team and server team. Ensures that guests are of legal drinking age by checking identification

QUALIFICATIONS: 

High School diploma or equivalent preferred. A minimum of 3 - 5 year of experience as a Bartender in a high-volume restaurant required.  Knowledge of beer, wine, sake, cocktail knowledge recipes and preparation. Understands variance policy of cash drawer and maintains low variance Outstanding public relations skills and outgoing personality.  Ability to read and write English sufficiently to perform job. Remaining calm in a fast-paced atmosphere. Must possess basic math skills.  Must be able to count cash drawer accurately Must possess excellent conflict resolution skills. Demonstrates a high level of leadership, organization, attention-to-detail and a sense-of-urgency. Displaying a positive and outwardly friendly attitude toward guests. Must be observant and quick to respond to various situations while also multitasking and handling multiple situations Available to work a flexible schedule which may include nights, weekends, holidays and overtime as needed.  Must be able to maintain a neat, professional, well-groomed appearance and uphold company appearance/dress standards.

PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS: 

Must be able to maneuver to all areas of assigned restaurant throughout entire shift. Must be able to accurately and quickly process all cash transactions.  Must be able to tolerate areas containing secondary smoke.  Must be able to work at a fast pace and in stressful situations.  Must be able to read, write, speak and understand English.  Must be able to respond to visual and aural cues.
