The Lead Culinary Assistant’s main responsibilities include assisting with the preparation and serving of facility meals, maintaining high standards of safety and sanitation, washing and storing all dishes, silverware, glassware, pots, pans and utensils, stocking and cleaning required areas, and providing shift leadership in the absence of the Culinary Manager and Assistant Culinary Manager. Responsibilities Include: Prepares and serves meals to patients, visitors and staff, maintaining high standards of safety and sanitation in preparation and food handling areas. Assists in preparing and serving therapeutic diets to patients ensuring compliance with physician orders. Assists in planning and preparation of future meals. Understands and uses the approved dietary manual in food preparation. Properly stores and rotates daily and weekly grocery deliveries; proper use of FIFO process. Properly stores leftover foods according to policies and procedures of the facility. Obtains and maintains necessary supplies in the dishwashing area. Washes and stores all dishes, silverware, glassware, pots, pans, and utensils properly. Uses and cleans dishwasher properly. Maintains dishwasher and refrigeration temperature records. Properly stocks all items on the beverage table and silverware/snack carts. Communicates appropriately with patients, visitors, and staff. Participates in maintaining the dietary area as a safe and sanitary area according to daily and weekly cleaning schedules. Completes all appropriate reports maintaining compliance with the policies and procedures of the facility. Assists in staff scheduling, inventory, and shift coverage as needed. Participates as a team player in Rosewood staff milieu. Performs other duties as assigned. Qualifications: Must understand recipe use and food measurements. High School Diploma, preferred not required. Must have knowledge of HACCP logs. Ability to read, write and follow directions. A minimum of 5 years of applicable experience or education, preferred. A desire to learn quantity food preparation and delivery, required. Familiarity with Safety and Sanitation practices. Ability to communicate with the patient community. Must be able to obtain Food Handler certificate within 30 days of hire #Rosewood
