SUMMARY
The Line Operator is responsible for loading the extruder and monitoring the extruder process and chip quality throughout the proofing and toasting process. Maintains standards for food safety and food quality. All procedures and practices used are grounded in standards, regulations and laws addressing food safety and food quality, as well as environmental safety in accordance
with Safe Quality Food (SQF) and Good Manufacturing Practices (GMP).

ESSENTIAL DUTIES AND RESPONSIBILITIES

Monitors dough sent from mixer to extruder on overhead conveyor systemCuts dough with a Chef’s Knife and loads the extruder as necessaryMaintains a measured amount of dough inside the extruder hopperMonitors the dough activity coming out of the extruder. Makes recommendations for improvements as needed. Clears dough jams with appropriate procedures and tools as necessary.Applies flour to the dusting table and top dusterMonitors the proofing line dough performance. Clears dough jams with appropriate procedures and tools as necessaryRecommends changes or makes changes to the sheeting processMonitors proofed dough by the slitters to ensure proper flow into the chip ovenMonitors chip cutting area for proper size and texture. Make recommendations for improvement if neededMonitors chip quality after the toaster oven.
