Manager of Events - Catering - Mandalay Bay

The SHOW comes alive at MGM Resorts International!

Join the Mandalay Bay team as The Manager of Events - Catering, you will facilitate all aspects of servicing catering and convention group catering from contract turnover to billing. This is a fast-paced environment focused on selling food and beverage services. The manager is responsible for achieving an annual catering sales target of two million dollars, and is responsible for the accurate budgeting and forecasting of their groups.

THE DAY-TO-DAY:

Group Coordination:

Handle all group details from contract turnover to group departure, including food and beverage programs, menu selections, revenue estimation, and setup requirements.

Manage sub-group arrangements, including credit and space requirements.

Respond to new catering business inquiries and obtain client requirements to execute catering contracts.

Obtain necessary deposits, payments, and signatures on all contracts, policies, and banquet event orders.

Produce and distribute event details, including banquet event orders.

Booking and Scheduling:

Check the availability of banquet space and effectively book the banquet facilities.

Book and service all group details for catering groups, including food, beverage, and meeting programs.

Conduct tours of banquet facilities, sleeping rooms, and other hotel areas.

Order outside services for events and maintain a flexible schedule to be present at various functions.

Quality Assurance and Meetings:

Ensure all catering services are presented in accordance with property standards and are of the highest quality.

Conduct pre-convention and weekly departmental meetings.

WHAT YOU MUST HAVE:

Bachelors degree or 4 years of equivalent work experience

1 year of prior experience in Catering Management

WHAT WILL MAKE YOU STAND OUT:

Experience handling large convention groups of 100 people or more.

Catering experience at a major convention hotel.

Excellent organizational and time management skills.

Strong communication and interpersonal skills.

Proficiency in budgeting and forecasting.

Strong attention to detail and a commitment to quality.
