Description:
Summary:
As the Pastry Production Manager, you are responsible for the daily operation and direct supervision of the production process within the Pastry department. Your role is pivotal to ensuring quality preparation of all menu items and proper handling/storage of all food items in accordance to Clark County Health District regulations. Additionally, your strong leadership and commitment to excellence ensures department team members are properly trained to upkeep Company standards.
Essential Functions and Responsibilities:
• Hire, train, measure performance, and discipline department team members to promote positive work environment
• Responsible for creating schedule and managing work flowto meet production goals based on business demands
• Provide continuous support and development for department team members to improve effiency and service
• Oversee daily pastry operations, including baking, decorating, and packaging
• Address any guest or team member concerns in a timely manner
• Ensure consistent quality and presentation of all pastry items
• Maintain the bake shop and ensure all equipment is clean, sanitized, and in fully operable condition
• Manage inventory and raw materials to ensure there are enough ingredients to meet business demands while minimizing food waste
• Originate and issue recipes to Bakers and sure they follow approved recipes
• Ability to plan, develop, and execute featured menu items as requested
• Ensure compliance with all applicable gaming laws and company internal controls, policies and procedures, Title 31, and federal regulations, if they apply to the position
• Provide outstanding guest service in a timely manner to both guests and fellow team members that meets the company’s guest service culture standards
• Perform other duties as assigned
Requirements:
Qualifications
• At least 3 to 5 years of previous experience performing similar duties
• Previous supervisory experience in a high volume bake shop preferred
• Knowledge of food cost controls
• Knowledge of Clark County Health District procedures and regulations for food safety
• Ability to work all stations on the line
• Demonstrated problem solving abilities
• Experience providing high level of guest service
• At least 21 Years of Age
• High School Diploma or Equivalent required
• Ability to effectively communicate in English, both written and verbal
• Obtain and maintain all work cards as required by the company
• Verify right to work in the United States

Physical Requirements
• Regularly push/pull up to 75lbs
• Regularly lift and/or carry up to 50lbs at floor, knee, waist, and chest levels
• Regularly squat, kneel, reach, bend, twist
• Occasionally sit and work at a desk or computer
• Frequently standing and walking
• Ability to work for sustained periods of time maintaining concentrated attention to detail
• Ability to hear, understand, and distinguish speech and/or other sound in person
• Ability to distinguish between shades of color
• Ability to use tools or equipment requiring a high degree of dexterity
