The Pastry Sous Chef assists the Head Chef in supervising, coordinating, and managing the planning, preparation, and production of all pastry items, ensuring smooth kitchen operations. This role is responsible for controlling food costs, portions, and managing inventory. Additionally, the Pastry Sous Chef works closely with the Chief Steward to maintain the highest standards of cleanliness. The position demands exemplary service, strong departmental leadership, and effective team management.
What you will do
To plan production of all the mise en place. To conduct daily departmental meeting to ensure proper communication and task are accomplished. To arrange and plan Chefs for daily operations. To liaise with Chefs de Partie and Demi Chef De Partie regarding items or Chefs needed for a smooth run of daily operations. To handle complaints/enquiries promptly and effectively and recommend and develop solution to meet customers changing needs. To inspect personal hygiene and grooming of Chefs. To check and liaise at all times with the Executive Steward to ensure that high standards of cleanliness are maintained, i.e. machinery, small equipment, floors, refrigerators, etc. To implement & reinforce all Health and Safety, Standard Operating Procedures and policies and procedures at all times.What you bring
The ideal candidate has previous experience as a Sous Chef, ideally with pre-opening experience, and is skilled in menu planning. They possess strong computer skills and excellent food knowledge, along with familiarity with a food purchasing system. A customer-focused approach, technical skills, effective time management, and a collaborative team-oriented attitude are essential qualities for this role.
