SMG Savor, the leader in privately managed public assembly facilities has an excellent and immediate opening for a Premium Services and Catering Manager (“Premium Manager”) at Baxter Arena. The Premium Manager reports to the Director of Food & Beverage and oversees all Food and Beverage Sales and Operation activities for the Premium Clients (Suites and Club Seats) as well as all Catering at Baxter Arena or any other designated venues. This includes all In-house Catering, Third Party Catering, Back Stage Catering, Pre-Game Services, Post-Game Services or any other services designated as “Catering.” The Premium Manager is responsible for providing the best customer service possible to all Premium and Catering Clients; retaining their support and keep them renewing their contracts. Also managing, recruiting, scheduling, coordinating, training and deploying Premium and Catering staff for all events at the facility or other venues.
A reasonable estimate for this position is $65k-$75k.
MAJOR RESPONSIBILITIES:
Work with the Executive Chef to create menu items that are cost effective and maintain the integrity of the Food and Beverage Department.
Work with Executive Chef to create menus to present to Clients as possible options for their Premium and Catering events.
Update Premium and Catering menus as needed.
Prepare Proposals, BEOs and invoicing for all events in a timely fashion.
Work with the Event Manager’s and Client regarding event details and preparation.
Oversee the operations of Premium Services and Catering from Set up through Break down of all events.
Supervise bar operations such as proper pouring of alcohol, cash handling, maintaining inventory, monitoring compliance of Nebraska State Liquor Laws and company policies, staff open and closure duties, customer service, etc.
Responsible for training staff members in proper Customer Service to ensure prompt and friendly service.
Assist with all catering functions and willingness to perform all positions required (bartender, server, suite runner, suite attendant, etc.).
Act as a liaison between event staff, kitchen staff and guests.
Work with Kitchen and Warehouse for proper set up of Premium and Catering Events including selection of buffet items, number of guests, timing, etc.
Work with Event Managers to coordinate client needs such as Riders, Room Set up, timing and other functional details
Attend the weekly Events Meeting and the weekly Food and Beverage Meeting
Perform Monthly Inventory of Suites and Catering supplies.
Maintain ServSafe Manager, ServSafe Alcohol and ServSafe Allergens Certifications.
Participate as needed in Food and Beverage Audits, Bars Audits, Health Department Inspections and any other audit as required by State and Local Agencies as well as SMG/Savor. Ensure that all staff has current food safety certification and/or ServSafe Alcohol. Ensure that all areas in Premium and Catering are always Inspection Ready.
Work directly with in-house client(s) to enhance sales and productivity.
Responsible for Posting Open Positions, Interviewing, Hiring and doing all new-hire paperwork associated with Recruitment.
Holding staff accountable for doing their duties properly through training, meetings, one-on-ones and documenting poor behavior including constructive counseling when needed.
Supervise employees and ensure all company policies and procedures are followed.
Responsible for accuracy and completion of opening and closing duties, delivery and transfer of inventory, cash and company assets (equipment, keys, small wares, etc.) of all staff.
Reviewing staff on a regular basis.
Schedule proper staffing for all events with the correct number of staff for each position.
Ensure that all payroll is submitted in a timely fashion.
Must be available to work nights, early mornings, weekends and holidays along with normal business hours.
Ensure compliance with all local, state, federal and company policies and laws.
Work with other Food and Beverage Managers for coverage as needed to ensure we are providing quality service in all areas of the business.
Works with the Director of F&B to assist with any managerial tasks to include but not limited to helping develop F&B team members skills, Month End projects and Client Reviews.
QUALIFICATIONS:
High School Diploma Required. Bachelor’s degree preferred.
2 to 4 years’ experience in food and beverage service.
Prior supervisory experience preferred
Highly motivated, self-directed, personable, positive and hard working.
Detailed oriented and able to perform independently with minimal supervision.
Must have excellent time-management skills
Strong communication skills and works well in a team-oriented environment.
Must obtain current food and alcohol manager certifications
Highly skilled in computer and digital programs
