ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:
Prepare orders according to standard recipes in proper, professional, and timely manner. Follow all preparation steps according to the quality-standardized recipes set by management. Inspect all culinary equipment before and after use. Understand and adhere to the proper storage of all food products, especially that of either hot or cold meats, seafood or other high protein items. Maintain the proper inventory of the work stations while controlling un-necessary waste. Review and maintain the prep list and the daily pars. Work and communicate with the other Line Cooks, Prep Cooks, Kitchen Workers, Food Servers and other culinary staff as necessary. Inform management of any problems or issues encountered during their assigned shift. Follows all recipes and control procedures. Slices cold meat and cheese and portions items. Responsible for maintaining a clean and sanitary area at all times in full accordance with State Health Regulations. Assists in all areas of food production as needed. QUALIFICATION REQUIREMENTS:

AGE and GAMING:
18 years of age or above
Gaming property – Must be able to obtain and maintain a gaming license issued by the Choctaw Gaming Commission.
EDUCATION and/or EXPERIENCE:
High School diploma or GED is preferred. Four (4) months of previous experience in food operations/preparation is preferred.
SPECIAL QUALIFICATIONS:
Strong organizational and interpersonal skills required. Must be Serv-Safe certified or become certified within thirty (30) days of employment at Pearl River Resort
If the previous food operations/preparation experience is not at a level of a Prep Cook position or higher, then the candidate must successfully complete the applicable Pearl River Resort on-the-job training program for the Prep Cook position or have completed similar type training through another recognized culinary training program.
LANGUAGE SKILLS:
Ability to read and interpret documents such as safety rules, operating and maintenance instruction, and procedure manuals. Ability to write routine reports and correspondence.
MATHEMATICAL SKILLS:
Ability to work with mathematical concepts such as addition subtraction and multiplication tables.
REASONING ABILITY:
Ability to define problems, collect data, establish facts, and draw valid conclusions. Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.
PHYSICAL DEMANDS:
The physical demands described here are representative of those that must be met by the Associate to successfully perform the essential functions of this job.
Essential responsibilities include moderate to heavy physical ability such as lift or maneuver at least fifty (50) pounds, and standing/walking 90% of the shift. Perform position responsibilities and/or essential functions on slippery or wet surfaces. Work with hazardous chemicals. Must be able to work while wearing latex, vinyl, or rubber gloves. Bending, stooping and stretching of arms during assigned shift.

The noise level in the work environment is usually moderate. When on the casino floor, the noise level increases to loud. When on the casino floor or other designated areas may be subjected to tobacco smoke.
Due to the unpredictable nature of the hospitality/entertainment industry, Associates must be able to work varying-schedules to reflect the business needs of the property.
