THE ROLE   

The primary duty of the Prep Cook is to prep and prepare high quality food to order for guests and all outlets throughout the Rogers Centre based on established guidelines. All orders and product will be prepared in a timely, professional, and courteous manner while maintaining quality consistency and productivity.

ESSENTIAL FUNCTIONS

Responsibilities include but are not limited to:

Reports to Executive Chef and Sous Chefs at the beginning and end of each shift for daily operational overview. Approach all encounters with guests and employees in a friendly, service-oriented manner. Maintain high standards of personal appearance and grooming, which include wearing proper uniform and nametag when working. Assume daily responsibilities according to schedule and business needs. Follow daily events, suite orders, catering contracts, all other events; prep and prepare food items accordingly. Ensure all items are made with standard recipes, portions, presentations, as approved by kitchen Management. Ensure equipment is in working order and sanitized. Place timely storeroom orders according to standards and procedures. Assist in proper presentation and preparing a variety of foods and special events. Ensure working areas, refrigerators, freezers, and the kitchen are sanitized. Rotation of stock according to FIFO methodology. Adherence to sanitation and health and safety procedures and standards. Follow cut glove policy. Set up stations using checklist and keep food on the line and in the kitchen fresh and containers sanitized. Ensure strict control of waste and portions to help control food costs. Maintain clean, safe, and organized work environment. Follow HCAAP procedures. Maintain proper temperatures for both hot and cold food items. Report any health and or safety concerns to Chef on duty. All other duties as assigned by Management.

QUALIFICATIONS

To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

Food Handler’s Certification. Minimum of 1 year cooking experience. Basic culinary and knife skills are required. Previous experience in all areas of the kitchen. Must be able to safely use and operate various knifes, cutlery, appliances. Minimum 18 years of age. Ability to work evenings, weekends, and holidays. WORKING CONDITIONS
