THE JOB: 

The Senior Manager of Catering will support the Executive Director of Catering in the daily management of property catering event operations.  This includes contributing to strategic planning, forecasting, implementing standard operating procedures (SOPs), and staff development.  The role will be pivotal in achieving and surpassing revenue goals by serving as the primary catering contact for the highest-grossing groups and other high-profile clients.

You will play a vital role in our mission to own the guest’s experience and create WOW memories that they will carry with them far beyond their stay with us.

THE DAY-TO-DAY:

The Senior Manager of Catering is directly responsible for managing the highest-revenue and most high-profile convention clients, focusing on food and beverage revenueWorking closely with clients on menu planning, event setup, décor, budget management, and billing to ensure the success of their programsThe role assists the Director in achieving annual budget and monthly forecasting goals by contributing to the research, development, evaluation, and implementation of new products, services, technology, and processesConducting competitor menu cost comparisons, implementing wedding and social marketing strategies for off-peak catering dates, and providing forecast reportingThe Senior Manager plays a key role in sales strategy to maximize revenue and reduce risk by reviewing space availability, implementing marketing strategies to target off-peak dates, negotiating and monitoring contracts, drafting catering discount clauses, and building strong client relationshipsThe position also oversees the daily operations of the Catering team, coaching and directing staff to ensure smooth event executionThe Senior Manager provides performance feedback, offering corrections and praise when appropriateThis role holds both the team and self accountable for maintaining adherence to property guest service and brand standards by refining service standards and modeling professional interactions with both internal and external guestsThe Senior Manager assists the Director in establishing, implementing, and enforcing Catering departmental policies and proceduresAdditionally, the role takes responsibility for the Human Resources functions within the assigned department(s), fostering a work environment that promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction. Responsibilities include quality hiring, staffing level evaluation, training, and succession planning, with a focus on the company’s commitment to diversity

THE IDEAL CANDIDATE:

Bachelor's Degree or equivalent experienceTwo (2) years of previous experience in Caterin, Conventions and/or BanquetsPrior experience in a similar a similar luxury resort settingExpert working knowledge of food, wine and beverage service including menu developmentWorking knowledge of catering sales systems and a proven track record with Food & Beverage cost controlsStrong strategic planning, project management skills and superior decision‐making while managing multiple prioritiesExceptional customer service and interpersonal skills to communicate effectively with all stakeholdersAble to effectively communicate in English, in both written and verbal formsThe ability to lead and mentor a team
