Senior Sommelier – Tavernetta Vail  

Four Seasons Vail is excited to launch the collaboration of Four Seasons and Frasca Hospitality Group to create Tavernetta Vail. “Frasca Hospitality Group, led by Chef Lachlan Mackinnon-Patterson, Master Sommelier Bobby Stuckey, and Peter Hoglund, is dedicated to providing warm and gracious hospitality. Founded in 2004 with the goal of creating "the best neighborhood restaurant in the world," the group opened Frasca Food and Wine in Boulder, Colorado, inspired by the frascas of Italy's Friuli-Venezia Giulia region.  

The group has expanded to include the Italian- and European-inspired eateries of Pizzeria Alberico, Sunday Vinyl, and the Michelin Bib Gourmand-awarded Tavernetta in Denver. We seek to continue this expansion here with the opening of Tavernetta Vail by hiring enthusiastic, ambitious, and humble staff to uphold a culture of excellence, education, and respect.” 

About The Role:  

The primary responsibility of the Tavernetta Vail Senior Sommelier is to set the team up for successful service through proper maintenance of the administrative duties of the wine program, to lead the entire Front Of House team by leading through great habits on the floor (i.e. “all eyes on me”, i.e. “leading by example”), and to effectively communicate regularly with the General Manager. Additional tasks include completing monthly inventory and weekly ordering for the beverage program, along with day-to-day operations of the restaurant.  Sommeliers will be held to the Court of Master Sommeliers standards of service, theory and tasting.     

What You Will Do:  

Develop and maintain the wine program within Tavernetta Vail. 

Ensure beverage requisitions are accurately completed and submitted each night. 

Check BEOs for private party orders - make sure wines are in stock for upcoming parties. 

Communicate with the Purchasing Department on all wine product needs or issues. 

Strong communication with the entire team about any changes to the wine program. 

Train team members on new products. 

Inform team about items that are no longer available or have changed. 

Wine menu management

Printing wine lists - (this can be delegated to floor sommeliers) - wine list must be accurate, correctly spelled with no typos or spacing errors. 

Daily 86s and additions - MUST be communicated to GM/AGM. One day or two days can go by with items being unavailable, but that’s it. Wines that need to be added to the list should be listed on pre-shift. Any items that are 86’ed must come off every day. 

Website must be updated with current wine list weekly. 

Communication of wine list needs/gaps with General Manager. 

Inventory 

Being present for inventory each month is mandatory (1st of each month). This is non-negotiable. This will occur on the evening of the last day of the month after service or the morning of the 1st, as dictated by the General Manager/Director of Purchasing. 

Process inventory from beginning to end and submit it to the General Manager for review. 

A variance report must be thoroughly reviewed prior to submission of inventory. All variances must be explained/accounted for.  

Leadership 

Always maintain positive attitude, before and during service. 

It is the role of the Senior Sommelier to spearhead education in pre-service, study sessions, and on a monthly class basis.  

The education schedule must be planned in advance with the guidance and coordination of the General Manager. Education is expected to be constant and diverse. 

Provide assistance to entire FOH team during service. 

Assistance with exam preparation for the staff - mock exams, help studying, etc. 

It is the responsibility of the Senior Sommelier to generate theory quizzes on both the wine list and general theory quizzes for the floor sommeliers and the wine backs. These quizzes must be administered on a regular basis and the results should be communicated to the General Manager. 

Communication 

Effective communication with the General Manager. If a core item is 86’d, communicate that and other updates via a weekly email. 

If leaving town, you must set an out of office reply on your email - it is also expected that you will give notice to the General Manager when leaving town. 

Strong communication with all management. It must occur at appropriate times, i.e. service is not the appropriate time to approach the floor managers or General Manager about issues that are best suited for a one on one, instead request a meeting. 

 

What You Bring:  

Theory - must have passed/or be pursuing the Advanced Certification from the Court of Master Sommeliers or have an equivalent certification and/or experience and knowledge. A theoretical assessment will be given before the interview process. 

Attitude - willingness to learn in a fast paced, high-volume environment.  

Guest - positive interactions and focused on hospitality.    

Teamwork - must be a conscientious individual that has a strong sense of teamwork and the confidence to strive to be better than the day before.  

Mentorship - a strong understanding of teaching and development of staff.  

Understanding inventory, purchasing, beverage, and invoice reconciliation.  

Communication - Must have strong communication skills and be comfortable with numerous daily internal and external email communications, calendar communications, in person communication with co-workers, guests and vendors. 

This role has direct contact with guests and as such, good communication skills are a necessity.  

Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.  Bi-lingual in Italian/Spanish is a plus. 

Must be able to stand for 8+ hours. 

 

Preferred Qualifications 

Proficiency with email, OneDrive (file sharing service), Excel, and Word. 

Minimum five plus years in the F&B industry (within the past ten years) with three plus years in a Sommelier role.  

Italian wine & culinary knowledge.  

Professional and confident verbal and written communication. 

Strong ability to multitask.

Schedule & Hours: 

This is a full-time position.   

A successful candidate will have the ability to work evening shifts, weekends, and holidays.
