Adhere to the company’s mandated F&B menu and purchasing programsKEEP AN EYE ON THE NUMBERS
Maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations; review monthly profit & loss statements and make adjustments as necessaryGET THE PARTY STARTED
Work with the Operations team and Sales staff in the absence of the KM/Chef, plans, supervises and executes all banquet functions in conjunction with the operations and sales staff including supervision of the preparation and service of food and refreshments, as well as clean-up.PLAN LIKE A PRO
Estimate food consumption and make purchases as appropriate from our specified food program; schedule staff efficiently to accommodate shifts in business volumeASSEMBLE AN ALL-STAR TEAM
Partners with KM/Chef or General Manager to address and resolve disciplinary issues as appropriate. Fosters a team work environment.COMMIT TO QUALITY
Ensure that our product quality, freshness, and presentation are always at company standard; supervise and oversee the preparation, portioning, garnishing, and storage of all foodKEEP IT CLEAN
Facilitate Assists Chef with managing all kitchen equipment maintenance as well as local Department of Health (DOH) regulations by conducting sanitation audits. Reports critical issues to General Manager asap. Will also proactively ensures that a clean, safe environment is maintained at all times.
WHO YOU ARE
Sous Chefs possess a highly developed sense of customer service and interpersonal skills including high integrity, respect for all individuals (customers, vendors, and employees), solid communication skills, strong critical and analytical thinking skills, and appreciation of diversity (thought, ethnic, gender, etc.). Thorough working knowledge of POS register systems; experience utilizing word-processing, spreadsheets, inventory, internet and related PC based systems. Basic business math and accounting skills, and strong analytical/decision-making skills.
Sous Chefs must be strong team players and people developers, possess a high level of profit and loss capability, and strong organizational skills and attention to detail. Our centers are fast-paced, high-volume retail environments that are as demanding to work in as they are rewarding. You’ll be supervising a team of lead cooks, cooks, dishwashers, and servers, and will report to and support your center’s Kitchen Manager and General Manager on all matters food-related.
