Under the direction of the Executive Chef as well as the Chef de Cuisine, the Sous Chef prepares meals and coordinates and assists in prep work. Assists in managing and mentoring cooks and other part-time food service workers in the The Junction. Assist in ensuring proper sanitation, production and quality control for The Junction Promotes and exemplifies Dining Services’ Mission of “Creating an Excellent College Experience” as well as our PREDICT Core Values.
Responsibilities Produce and coordinate production for The Junction Kitchen, serving approximately 2,000 + guests daily with a total annual revenue of over $3.5 million. Assist in ensuring quality and safety of food from production throughout service.Control costs in The Junction Kitchen in order to stay in line with annual budget and projections throughout the year. Specific areas of emphasis are Cost of Goods Sold, Kitchen Labor, Tools, and Equipment.Work with Executive Chef and Chef d’ Cuisine in training, mentoring and supervising culinary staff of The Junction Kitchen.Coordinate with Executive Chef and Chef d’ Cuisine to ensure food, equipment and supplies are purchased in an appropriate quantity and in time to maintain the highest quality.Assist Executive Chef, Chef d’ Cuisine and Junction Operations Manager in developing an Annual Budget. Assists in creating Strategic Plans including a 3 year rolling Capital Expenditure Plan. QualificationsThree years of applicable Culinary experience or Culinary Arts training plus one year of experience is required.
