Job Summary Working as the Sous Chef, you will be responsible for the successful operation of the Culinary Department for a facility. You will assist in the supervision, preparation, and cooking of various food items, developing daily menu items and their preparation and garnishment. You may supervise hourly associates and you work with Executive Chef/Chef to develop new menus and assist with ordering. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional. Key Responsibilities: + Responsible for all HACCP Monitor Programming and ensuring proper temperatures are being taken daily + Responsible for supporting and assisting the executive chef in ensuring a safe work environment by: + training staff in safe food production and safe food handling techniques + upholding safety standards established by the city of Chicago, FLIK,EHA, and the executive chef + upholding FLIK standards governing the workplace in order to ensure an environment that is free harassment of discrimination + correcting and counseling staff members needing core improvement in safe food production or food handling + Directing the staff in the maintenance of a clean and healthful kitchen and service line + initiating maintenance requests in order to keep the kitchen equipment in food working order + Responsible for the correct and timely execution of food the Exchange cafe: + forecasting the amount of food and labor needed in order to operate each station in the servery based on client demand + preparing detailed prep lists for The Exchange kitchen team & Commissary Kitchen daily + communicating daily with foh manager on any changes that may arise due to product unavailability or staff attendance + leading The Exchange kitchen team in correct production techniques for the highest quality end product + ordering the highest quality product available while at the same time respecting the budget, storage space, and delivery window of each vendor + ensuring that food is prepared in "batches" so that the first and the last client of the day have the same experience + directing and controlling the workflow so that all stations are set and ready each day before opening Preferred Qualifications: + A.S. or equivalent experience + Some progressive culinary/kitchen management experience, depending upon formal degree or training + Catering experience a plus + High volume, complex foodservice operations experience - highly desirable + Institutional and batch cooking experiences helpful + Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation + Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet + Must be willing to participate in client satisfaction programs/activities + ServSafe certified - highly desirable Apply to Flik today!
