DEPARTMENT DESCRIPTION:

At CHA, our food service department plays an important role in the satisfaction of our patients and colleagues. Food service team members enhance the patient stay by delivering three quality meals a day to the patient’s bedside. Our Expressly for You program assigns each patient a dedicated Food Service Host/Hostess to take care of all of their dining needs. Meal orders are taken bedside and entered electronically via a tablet computer. This system interfaces with the hospital medical system, allowing for our hosts/hostesses to understand each patient’s unique dietary needs. In addition, the food service department operates a recently renovated cafeteria that caters to staff members and the general public including a salad bar with fresh and local ingredients, hot soups made fresh daily, a deli station, and an entrée station featuring favorite dishes. There is also a mix of snack and beverages, along with full daily breakfast offerings.   

Summary:
Performs a variety of standard tasks in preparing, handling, serving, transporting and storing food stuffs.
May also perform a number of non food related activities such as cashiering, cleaning, and sanitation. May also move fixtures or equipment, wash pots, pans, small wares, and other dish room equipment

Responsibilities:
Food production:
• Prep, prepare and assemble cold salad plate according to recipe cards and nutritional guidelines
• Prepare or assemble various dessert items such as jello, salads, pastry, etc., according to recipe card and productions
• Covers, wraps, labels, and dates all necessary items correctly and consistently.
• Follows daily production sheets consistently and correctly
• Uses the proper dishes, plates, and portion control, utensils when assembling hot/cold food items
• Washes all produce before they are prepared or eaten
• Store all food stuffs in approved receptacle after desired portions have been removed i.e., #10 left ½ full
• Prepares salads and salad bar items according to specific guidelines
• Set up food service bar: specialty salad and other similar items according to specific guidelines
• Prepare and deliver between meal snacks, prepare and serve sandwiches, desserts, salad entrees, side dishes and other “to order” food products for patients, customers, and special functions.
• Heat and serve items to proper serving temperatures, i.e., pizza, rolls, toast and other similar items
• Prepare and deliver special tube feedings and enteral nutrition products according to patients specific diets
• Operate food service equipment such as meat slicers, can openers, buffalo chopper, steam tables, chafing dishes, coffee pots, etc., in a correct, safe and timely manner.
• Assists in preparations of non-ready to eat foods prior to their cooking.
Associate/Customer/Patient Service:
• Maintains a “customers always right” attitude
• Performs cashiering according to department guidelines
• Delivers and picks up trays, patient meals in a proper, professional and timely manner.
• Serves cafeteria or function customers in a polite, correct manner
• Assembles and delivers patient trays correctly and accurately for regular and or modified diets.
• Can work alone or as part of a team on a moving assembly line, assembling patient trays correctly and accurately
• Seeks other responsibilities when all assigned tasks are completed.
• Willing to change assigned breaks or start times to accommodate special situations or department needs with little notice
• Performs related tasks as required
• Picks up and or delivers patient food trucks in a safely, correct and timely manner.
• Performs meal assessments with management when required to do so
• Takes food temperatures and logs them as required by job low or managements requests
• Stocks and replenishes food service equipment such as coolers, steam wells, bain-marie, racks or similar items according to established guidelines and job flows.
Sanitation
• Wash and sanitize work stations after each use with proper chemicals, chemical rations and cloths
• Cleans and maintains dining area including counters, tables, and furnishings
• Dispose of trash and garbage when necessary
• Wash and polish food service equipment according to job flow or requested by food service management
• Practices a “clean as you go” work ethic
• May clean work areas, tables, cabinets, refrigerators, and floors.
• May tend and load machines that clean food service items or hand wash items that are not machine washable
• May move, stack, set or clear tables, chairs, and other related items on a daily basis or for special functions
• Delivers clean dishes, utensils, and other small small-wares to proper kitchen units
• Wash or wipe counters, walls, and other similar areas if requested to do so
• Properly cleans food trucks and other similar equipment using the correct chemical
